There are light soups and heavy soups. The light soups enhance your appetite and the heavy ones fill up the tummy. This Almond Soup is a heavy one. But it does not have all the fats that heavy soups usually have. Just a spoon of Oil and some Butter, if you like. That is all. This is perfect when you want Soup breakfast or a light dinner.

Tips

Almonds:

  1. I have boiled Almonds and peeled them. You could soak them over night, peel them and use them too.

Veggies:

  1. If you add some Sugar while boiling the Vegetables, they won’t change colour even after cooking.

  2. Not just the vegetables I have suggested, but you could also add Broccoli, Mushrooms, some Sweet Potato or Sweet Pumpkin and anything else.

  3. I have used frozen Corn and Peas so I put them directly in the mixie. If you are using fresh ones, cook them a little along with Carrots.

  4. Vegetables should be ground to a coarse paste.

Ingredients

  • 15 Almonds
  • 1/3 cup Carrot
  • 1/3 cup Beans
  • 2 tbsp Sweet Corn
  • 2 tbsp Green peas
  • 1/2 tsp Oil
  • 1 tsp Butter ()
  • Salt
  • 1 tsp Pepper Powder
  • 1 tsp Grated Ginger
  • 1 tsp Grated Garlic
  • 1 tsp Green Chillies paste
  • 400 ml Water

Instructions

  1. The peel comes off if the Almonds are boiled in just 10 minutes in Water. Grind the cooked Almonds to a smooth paste.
  2. Add Sugar, Carrots and Beans to water and cook for 3-4 minutes.
  3. Grind the cooked Beans, Carrots, Sweet corn and Peas to a coarse paste.
  4. Melt Oil and Butter in the Soup pan, add Garlic and Ginger and fry till they turn golden.
  5. Add the coarse Vegetable paste to the fried Garlic Ginger and fry for 2-3 minutes.
  6. Pour water on the fried Vegetables. Take off the layer of foam that forms on the top.
  7. Then add the soft Almond paste, Salt and Pepper powder and cook until thick for 3-4 minutes. 8. Once the Soup thickens, serve hot.
