Simple and easy to make Potato and Capsicum Curry is an excellent side dish for Rice, Pulav, Poori or Chapati.

I personally prefer simple recipes and this is one under that category which requires just 4-5 ingredients. One can relish it thoroughly.

This Curry can be made in different styles. I made it with less Oil and spices. You can use more if you prefer. Please follow the tips for this.

Tips

Potatoes:

  1. I removed the peel of the Potatoes and chopped them and fried them in the Oil. But you can also cook them after cutting.

Capsicum:

  1. You can use French Beans instead of Capsicum and also some Carrot pieces. But you will have to fry French Beans and Carrot with the Potatoes.

Ginger Garlic Paste:

  1. I have not used Ginger Garlic paste in this recipe. But you can add it if you want. I made it like a simple everyday Curry.

Garam Masala:

  1. Some Garam Masala can be added to this curry if it is eaten with Chapati or Pulav. When the Curry becomes hard after it cools down, you can add some hot Water before serving it.

Ground Nuts:

  1. Cashews can be used instead of Ground Nuts as per your choice. Friend Coconut Paste can also be used to enhance the taste.

Ingredients

  • For the gravy
  • 2 tbsp Oil
  • 1/4 cup Groundnuts
  • 4 Green Chillies
  • 1 Onion
  • 3 Tomatoes
  • 1/2 tsp Turmeric
  • Salt
  • Water - for the paste
  • For the curry:
  • 4 tbsp Oil
  • 3 Peeled Potatoes
  • Turmeric - 1 pinch
  • Salt - required
  • 1 Big Capsicum (pieces)
  • 1 Big Onion (pieces)
  • 1 cup Water
  • 1/2 tsp Chilli powder
  • 1/4 tsp Garam Masala
  • Chopped Coriander - Little

Instructions

  1. Pour some Oil in a pan and fry the Peanuts till they splutter. Add chopped Onion and and Green Chilli pieces to this and fry till they become soft.
  2. Add Tomato pieces, Salt and Turmeric to the pan, mix well, close the lid and cook it till it becomes soft.
  3. Grind this into a smooth paste by adding some water.
  4. Heat some Oil in a pan for the Curry. Add peeled Potato pieces, Turmeric, Salt and fry them in a low flame. Close the pan with a lid and fry them till they become golden brown.
  5. Add Capsicum pieces, Onion pieces and fry for 2-3 minutes.
  6. Add the Groundnut paste, Water, Chilli powder and cook it on a medium flame for 7-8 minutes. Add Garam Masala and chopped Coriander to this curry. Leave it on the flame for 2-3 minutes. Now, the Potato Capsicum Curry is ready to serve.
