Rasam is very easy to make if you have Rasam Powder at hand. There can be many kinds of Rasam with this Powder. In any type, this is the base Powder. Just add whatever you like to the Rasam, and then this Powder and you have the Rasam ready. This is a standard Powder with perfect measurements. If this Powder is stored in the refrigerator, it lasts at least five months.

Tips

  1. If the ingredients are slowly and one by one roasted, every seed gets roasted to the core, and the Powder tastes rich and adds aroma to the Powder.

Ingredients

  • 1 cup Coriander Seeds
  • 1/4 cup Cumin Seeds
  • 1/4 cup Red Gram
  • 1/4 cup Pepper
  • 15 Red Chillies
  • 1/4 cup Curry Leaves (25 gm)

Instructions

  1. Take a thick-bottomed pan and add Coriander Seeds. Roast on a low flame only until they change color and give out a pleasant aroma.
  2. Add the other ingredients one by one and roast them all on a low flame. Remove and let it cool.
  3. Fry Curry Leaves until the moisture in the leaves is gone.
  4. After it is cooled, make a slightly coarse powder of the mixture.
  5. If you like, add 1 tbsp Turmeric and ½ tsp Asafoetida to the Powder.
  6. If this Powder is added to Tamarind Juice and it is boiled, and if you add a seasoning of Mustard Seeds, Fenugreek Seeds and Curry Leaves, a simple Rasam is ready.
