It is always satisfying to have eggs in any recipe. Hope you all agree with me. This Bengal Gram Omelette tastes good along with hot Rice.

This recipe is made mostly by Muslims. I had it at an Ifthar party at Ameena Aunty’s place. I liked it a lot. Some recipes are simple to make, using limited ingredients, but nevertheless taste unique.

This can be made easily by Bachelors and also if you want to make some special dish with eggs.

Tips

Omelette:

1.This Omelette requires a little more Oil to make it fluffy and tasty or else it becomes dry and hard.

  1. Cook the Omelette only up to 90% and fold it into half . Remaining cooking will be done with the steam. Do not overcook it, or it becomes too dry.

Bengal Gram:

1.Soak Bengal Gram for 1 hour before cooking, so that it gets cooked softly.

Other Tips:

  1. Cook the Omelette and curry for only 2-3 minutes. If you over cook it, it becomes hard on cooling. Eggs will absorb the excess moisture from Bengal Gram.

3.You can add boiling water and a little salt to make it loose, if it becomes hard.

4.You can use 2tbsp Tamarind pulp if you want a tangy taste.

Ingredients

  • For the Curry
  • 1 cup Raw Bengal Gram
  • 3 cups Water
  • 2 tbsp Oil
  • 1/2 inch Cinnamon
  • 1/2 Bay leaf
  • 2 Cardamom
  • 2 Cloves
  • 1 tsp Cumin
  • 1/2 cup Chopped Onions
  • 1/4 cup Tomato pieces
  • 3 - 4 Green Chillies
  • 1 tsp Ginger Garlic paste
  • Salt
  • 1/4 tsp Turmeric
  • 1/2 tsp Roasted Cumin powder
  • 1/2 tsp Coriander powder
  • 1 tsp Chilli powder
  • 1/2 tsp Pepper Powder
  • 2 tbsp Chopped Coriander
  • 1/4 cup Tomato pieces
  • 1/2 tsp Garam masala
  • 2 tbsp Chopped Coriander
  • For the Omelette
  • 4 Eggs
  • 1/2 tsp Pepper powder
  • Salt
  • 2 Pinches Turmeric
  • 2 tbsp Chopped Tomatoes
  • 2 tbsp Chopped Onions
  • 1 tbsp Finely chopped Green Chillies
  • 2.5 tbsp Oil

Instructions

  1. Heat some oil in a pan, add Bay leaves, Cloves, Cardamom, Cinnamon, Cumin, and fry well.
  2. Add Chopped Onions and fry till they turn golden brown. Add Tomato, Ginger Garlic paste, Green Chillies and fry.
  3. Once the Tomato becomes soft, add Salt, Turmeric, Coriander powder, Chilli powder, Pepper powder, and fry till the oil floats to the top.
  4. Add Soaked Bengal Gram and fry for two minutes. Add water and cook on a high flame till you get one whistle and on a low flame till you get two whistles. Remove from the flames and leave it till the steam is gone.
  5. Beat the Egg along with the ingredients used for the Omelette. Take some oil in a pan, and pour this to make Omelette and cook only 90%. (Follow the tips).
  6. Cut the Omelette into pieces.
  7. Place the Bengal Gram mixture on a high flame to remove the excess moisture. Now add Tomato pieces, Garam Masala, Chopped Coriander, Omelette pieces, cook for 2 minutes and remove from flame and serve hot.
