Chettinadu Special Bendakai Mandi | Okra Curry | Bendakaya pulusu - Though it is a simple and regular curry,adding a single ingredient will change its taste completely, This Chettinad Okra Mandi is one such kind of recipe. This simple recipe is made commonly in the Tamil Nadu-Chettinad region by Chettiar caste people.

Though it takes the same time as a Ladies' Finger curry to prepare, it tastes sour, spicy and is tasty to eat.This gets that unique taste by using water used for cleaning rice.This Curry can be made regularly,as it is very simple to make.

I tasted this curry for the first time in a Hotel near Karaikudi in Chettinad.I liked it very much. As the Hotel was owned by my friend, I could find out the recipe from him and be able to share it with you.

Tips

  1. Rice is washed and soaked in water for 30 minutes.Then the water is used in cooking, which gives a special taste to this curry.Telugu people add a little Rice flour, Turmeric,Chilli powder to it. But here we are using only Rice water.

Ladies' Fingers:

  1. Ladies' Fingers should be cut into 1 inch pieces and fried on a high flame till the stickiness is removed from them.Chettinad Curry has some stickiness in it. But I personally don't like it,so fry more.You can fry for less time to retain some stickiness.

Ingredients

  • 2.5 tbsp
  • 300 gms Ladies Finger
  • Salt- Required
  • 1/2 tsp Mustard
  • Fenugreek - pinch
  • 100 ml Tamarind Juice (Extracted from lemon sized tamarind)
  • 4 Red chillies
  • 6 - 7 Garlic
  • 2 Strands Curry Leaves
  • 10 - 12 Sambar Onions
  • 1/4 cup Chopped Onions
  • 2 Slit Green Chillies
  • 400 ml Water for cleaning Rice

Instructions

  1. Heat some oil in a pan. Fry the Ladies' Fingers pieces, covering them with a lid, till they change color. This will remove the stickiness from them.
  2. Keep them aside after frying.
  3. Roast some Mustard and Fenugreek in the same pan till Fenugreek turns golden brown. Then add Bengal Gram and fry for some more time.
  4. Then add Red Chillies, Garlic, Curry leaves and fry till the garlic becomes golden brown
  5. Add Sambar Onions, Chopped Onions, slit Green chilies and fry till the onions turn golden brown
  6. Add Tamarind water and boil once. Now add fried Ladies' Fingers pieces and cook for 2 minutes.
  7. Add water used to wash rice and cook for 4-5 minutes on a medium flame. Check the Salt and remove it from the fire.
  8. It tastes good with hot Rice.
