Ingredients

  • 1/2 Kg Potatoes
  • 1/2 tsp Fenugreek Seeds
  • 2 Red Chillies
  • 1/2 cup Oil
  • 1 cup Chopped Fenugreek Leaves
  • 1 tbsp Mirchi Powder
  • Salt
  • 1 tbsp Coriander Powder

Instructions

  1. Heat oil and add the Potato pieces, soaked in water for 30 minutes, and fry till they turn light golden. Once they turn golden, remove and set them aside.
  2. In the same oil, add Fenugreek Seeds and Red Chillies and roast until the Fenugreek Seeds turn red.
  3. Add the Chopped Fenugreek Leaves and fry for 2 minutes until the raw smell goes off and the leaves turn soft.
  4. Add the Potato pieces, Salt, Mirchi Powder and Coriander Powder and mix well. Cover and cook on medium flame until oil separates.
  5. After the Fry is ready, remove it into a vessel, cover it with a sieve so that the Potato pieces do not become soft and stay crisp.
  6. This Fry is excellent with hot Rice and Ghee and an accompaniment with Sambar, Rasam and Curd Rice.
