Instructions

Boil chopped Spinach, Green Chillies, Salt, Sugar and boil them once and put them in cold water immediately.

Boil Mushrooms in a separate pan and put them in cold water and keep them aside.

Heat some oil in a pan, fry Red chillies and Cumin wait till they splutter.

Now add grated Garlic and fry till they turn light brown then add chopped Onions and fry till they turn golden brown.

Once it is properly fried add Salt, Turmeric and Spinach paste. Cook till the oil floats to the top.

Add Chilli powder, Garam masala, Kasuri Methi and fry for some more time, till the oil leaves the Spinach.

Add water to it and once. Add Mushrooms to it and fry till the oil floats to the top.

Finally, add Fresh Cream, stir well and remove from flame.

Melt some ghee in a pan, add Red Chillies, and Grated Garlic. Roast them till they turn golden brown and add them to the Curry.

This Curry tastes well with Roti and Naan.
