Add Cooking Soda to the Curds. The Curds will rise in a froth. Add Semolina to the risen
Curds and beat well. Let it rest for 30 minutes.
Make a paste of the soaked Puffed Rice. Mix this paste and Salt in the Rava and Curds
mixture. Beat well again. Add water to adjust the batter, if needed.
Put batter in Idli moulds and steam. Cook on high flame for 5 minutes, then reduce the
flame and cook for another 3 minutes. Put the stove off and leave the Idli cooker aside for 5 minutes.
Take the Idlis out and serve hot with Idli Karam Podi (Spicy powder) and Ghee.
