Ingredients

For Green Chutney:
- 1 cup Coriander Leaves
- 1/2 cup Mint Leaves
- 1 tbsp Roasted Peanuts
- 4-5 pods Garlic
- 1 inch Ginger
- 1 tbsp Lemon Juice
- 1/2 tsp Cumin Seeds
- Salt (to taste)
- 1/2 tsp Chat masala
- 1/4 cup Ice cold Water

For Aloo Stuffing:
- 2 tbsp Oil
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 1 sprig Curry Leaves
- 1 tsp Chilli Paste or Finely Chopped Green Chilli
- 2 pinches Hing (Asafoetida)
- 1/4 tsp Turmeric Powder
- 1 tsp Ginger-Garlic paste
- 2 Softly Boiled Potatoes (mashed)
- Salt (to taste)
- Coriander Leaves (Chopped)
- 1/4 cup Softly Boiled Peas (gently mashed)

For Sandwich Assembly:
- 8 slices Sandwich Bread
- 4 slices Cheese
- 1 tsp Butter (for each slice)
- 1 tsp Green Chutney (Pudina-Coriander Chutney)
- 4-5 Cucumbers (Thinly sliced)
- 1 slice Beetroot
- Onion Rings
- Capsicum Rings (A Few)
- Sandwich Masala Powder or Chat Masala (A Little)
- Additional Butter for Spreading

For Sandwich Grilling & Garnishing:
- Butter (for grilling)
- 1 tsp Green Chutney (for topping)
- Sev (for garnishing)
- Grated Cheese (for garnish)
- Tomato Ketchup (for serving)
Instructions
- Prepare the Green Chutney: 1). In a blender, add coriander leaves, mint leaves, roasted peanuts, garlic, ginger, lemon juice, cumin seeds, salt, chat masala, and ice-cold water. 2). Blend until smooth. 3). Adjust the consistency by adding more water if needed. 4). Transfer to a bowl and set aside.

Make the Aloo Stuffing:
1). Heat 2 tbsp oil in a pan.
2). Add mustard seeds and cumin seeds, allowing them to splutter.
3). Add curry leaves and green chilli, frying until aromatic.
4). Add hing, turmeric, and ginger-garlic paste. Fry well.
5). Add mashed boiled potatoes and salt. Mix well.
6). Add chopped coriander leaves and softly boiled peas. Mash gently to combine.
7). Sauté well and transfer to a bowl. Set aside.

Assemble the Sandwich:
1). Take four slices of sandwich bread and spread butter on all slices.
2). Smear 1 tsp of prepared green chutney on each buttered slice.
3). Place 2 cheese slices on two slices of bread.
4). Spread a generous amount of aloo mixture over the cheese slices.
5). Layer with cucumber slices, beetroot slices, onion rings, and capsicum rings.
6). Sprinkle a little sandwich masala or chat masala.
7). Cover each stuffed slice with another buttered and chutney-smeared slice.
8). Press gently to secure the filling.

Grill the Sandwich:
1). Preheat a sandwich grill or pan.
2). Smear butter all over the sandwich grill surface.
3). Place the assembled sandwich onto the grill.
4). Close the grill lid tightly and trim the edges if needed.
5). Grill on a medium flame for 4-5 minutes until golden brown and crispy.

Garnishing & Serving:
1). Once grilled, smear 1 tsp of green chutney over the top of the sandwich.
2). Sprinkle sev generously over the top.
3). Grate cheese on top for extra flavour.
4). Cut into desired shapes and serve hot with tomato ketchup.
