Pepper Chicken Fry | Dry Pepper Chicken Fry | How to make Chicken Fry

Ingredients

  • 1/2 Kg Chicken (medium size pieces)
  • 75 ml Oil
  • 1/2 tsp Mustard Seeds
  • 2 Curry leaves
  • 10 Garlic pods
  • 1 tsp Ginger Garlic Paste
  • 1/2 cup Chopped Onions
  • 6 Red chillies
  • 1 tsp Ghee
  • Coriander leaves – a small bunch
  • Salt
  • 1 tsp Red Chilli Powder
  • 1/4 tsp Turmeric
  • 1 tsp Lemon Juice
  • FOR MASALA
  • 1 Cinnamon
  • Stone Flower – very little
  • 1 tsp Cumin Seeds
  • 1 tsp Fennel Seeds
  • 2 tsp Black Pepper
  • 3 Cloves
  • 3 Cardamom
  • 1 Star Anise
  • 1 Kapok Buds
  • 1 tbsp Coriander Seeds

Instructions

  1. Roast all the ingredients required for the Pepper Chicken Masala on a low flame until they turn aromatic and grind them into a fine powder.
  2. Heat the Oil and add Mustard Seeds, Red Chillies, Curry Leaves, Garlic and fry till they turn golden brown.
  3. Add Chopped Onions, after they become soft, add Ginger Garlic paste and fry it for a while.
  4. Add the Chicken pieces (soaked in Saltwater), close the pan with a lid, and on a high flame, fry until the Chicken leaves all the water.
  5. Now add Salt, Red Chilli Powder, Turmeric Powder, Lemon Juice, Pepper Chicken Masala to the Fried Chicken, mix it thoroughly and allow it to fry for another 15 mins till the oil floats on top.
  6. Make sure that, every 5 mins. you scrape and mix the masala properly.
  7. Once Oil floats on top of the Chicken, Switch off the stove, add chopped Fresh Coriander leaves and serve the hot ‘Pepper Chicken Fry’.
