This simple Soya recipe can stand up to any non-vegetarian dish. Sometimes you wonder if you are eating a non -veg Curry. The Soya Kurma is very easy to make. It is spicy and tasty and goes equally well as an accompaniment to Roti as well as rice!!!
Soya is often referred to as Meal- Maker. Soya Kurma is made in different ways. In the South of India it is made like the Soya Masala Kurma made in restaurants as part of the night meals to be served with Chapathis. This Soya Kurma is very flavorful and tasty. In short one can say that it can give a tough competition to any complex Non-vegetarian dish.

Tips
Soya (Meal Maker):
• I have used medium size Meal Maker. You can use a larger size if you wish.
• Meal Maker should be soaked in hot water for just 15 minutes. If it is soaked for longer time, the meal maker will break up and disintergrate when cooked in the curry.
Doing this may make the curry taste bitter:
• If the spices get burned even a little, the whole curry will taste bitter. Take care and fry the masalas on medium flame so that the curry does not turn bitter.
Kasuri Methi:
• Kasuri Methi gives a fine flavor to the curry. If you do not have Kasuri Methi, use fresh Methi (fenugreek) leaves. You may put in the Methi leaves after the onion is fried. Fry it until it turns red. Add tomato paste and fry well.

Ingredients
- 1 cup Meal Maker
- 3 Cups Hot Water
- Salt (A little)

For the Masala Paste:
- 4 Cardamom (Ilaichi)
- 4 Cloves (Laung)
- 1/4 tbsp Black Pepper
- 1 Inch Cinnamon Stick (Dalchini)
- Ginger (small piece)
- 5 Garlic
- 2 Onions
- 2 Green Chilli

For the Kurma:
- 5 tbsp Oil
- 1/2 tbsp Turmeric
- 1 Bay Leaf (Biriyani Patta)
- 2 Cardamom (Ilaichi)
- 2 Laung
- 1 Inch Dalchini
- 2 Green chillies (Slit lengthwise)
- 2 Sprigs Curry Leaves
- 1 Cup Tomato Paste
- Salt
- 1 tbsp Red Chilli Powder
- 1 tbsp Coriander (Dhaniya) Powder
- 1 tbsp Zeera Powder (Roasted)
- 1/4 tbsp Garam Masala
- 1 1/4 Cup Water
- 1/2 Cup Beaten Curd
- Coriander Leaves (Kothimir) (a little)
- 1 tbsp Kasuri Methi
- 1 tbsp Lemon Juice
Instructions

Soak the Meal Maker in water with a little salt for 15 minutes. Squeeze out the
water and keep the meal maker aside.

Grind all the ingredients of Masala paste into a fine paste.

Heat 1 tablespoonful of oil and fry the meal maker with a little turmeric for one
minute. Take it out and keep aside.

Heat the rest of the oil. Fry the cardamom, Cloves, Biryani Leaf, slit green
Chillies and curry Leaf.

Add Onion paste to the fried masalas and fry till oil floats to the top.

Now add Tomato paste and fry till oil floats to the top. Add the rest of the spices
and fry well. Remember to add a little water to avoid the masalas getting burnt.

Mix the fried Meal Maker into the fried Masala. Add water and let it cook for 7-8
minutes. Uncover the pot and add beaten curds. Close the lid and let it cook for 5
more minutes.

Before taking off the fire, sprinkle a little Coriander leaf, Kasuri Methi and a little
lemon juice. The richly flavored Meal Maker or Soya Kurma is ready!!
