Heat some Oil in a pan and fry Mustard, Cumin seeds and allow them to splutter. Then add chopped Onions, salt, Turmeric and fry until the Onions become soft.
Once the Onion becomes golden in color, add Tomato pieces, slit Green Chillies, Salt and cook till the Tomatoes become a pulp.
Add Coriander powder and Chilli powder to this Tomato pulp.
Pour 1/2 litre Water in this and boil it on a high flame .
Beat four Eggs in the gravy and do not stir it.
Reduce the flame to medium and leave it for 10 minutes so that the Egg is cooked properly.
Add Pepper powder and chopped Coriander leaves. Now slowly mix the Eggs with the gravy and serve it hot. This Curry goes well with Rice.
