Tips

  1. The Curry tastes better if the Brinjals are tender.

  2. It is enough for sliced Brinjals to fry up to 60% in Oil. The rest will get cooked in the gravy. Only then will the Brinjal absorb the flavours well.

  3. I have used some Red Mirchi Powder in the Curry for colour. As such, Green Chilli spice tastes better than red Mirchi Powder in this Curry.

  4. This Curry tastes better if you use both Ghee and Oil. But you could use just Oil too.

  5. Brinjal Curries taste good only if there is adequate Oil.

  6. I had fried Onions ready, so I used them. You could fry the Onions and make the Curry in the same Oil.

Ingredients

  • 6 Small Round Brinjals
  • 400 ml Water
  • Salt
  • Green Coriander – A little
  • 2 tbsp Ghee
  • 2 tbsp Oil
  • 1 Biryani leaf
  • 4 Cardamoms
  • 4 Cloves
  • 2 inches Cinnamon Stick
  • 1/2 tsp Cumin Seeds
  • 1/2 tsp Red Mirchi Powder
  • 1/2 tsp Roasted Cumin Seeds
  • 1 tbsp Ginger Garlic Paste
  • 1/2 tsp Pepper Powder
  • 1 tbsp Butter
  • 2 tbsp Milk Cream
  • For Masala Paste
  • 1 cup Fried Onions
  • 10 - 15 Cashew Nuts
  • 2 tsp Musk melon Seeds
  • 4 - 5 Green Chillies
  • Water to grind

Instructions

  1. Brinjals should be sliced vertically and fried in Oil to 60%.
  2. Grind all the ingredients for the Masala Paste into a smooth paste.
  3. Heat Ghee and Oil in a pan and roast Cinnamon, Cloves, Cardamoms, Black Cumin, Biryani leaf and Ginger Garlic paste.
  4. Add Salt, Mirchi Powder, Cumin Seeds Powder and fry.
  5. Add the ground Masala Paste and cook until Oil separates. Then add the Brinjals, pour hot water, cover and cook on a medium flame until Oil comes to the surface.
  6. Add Pepper Powder, Butter and Cream. Mix well and remove from the fire.
  7. This Curry tastes excellent with hot Rice, Chapathis and Pulkas.
