It is said that there can be no one who does not like the Brinjal-Sesame Curry; nor can there be anyone who can forget the taste of the curry having once tasted it. This will be vouched for by anyone who has tasted the curry.

This strong and spicy, sour and sweet Brinjal preparation is very easy to make. You just have to grind the Sesame (Til) Masala and mix it in fried Brinjals. That is all!! It is a perfect curry to have with a normal everyday meal. It gets ready in just 20 minutes. If you make any kind of Rasam or Sambar along with this curry and rice, the meal is complete.

Tips

Brinjals:

• Telugu people, especially people from Andhra like to use only tender, long, purple variety of Brinjals. Generally the cluster variety of Brinjals, the white Brinjals, or the bell- shaped large Brinjals are not used for this curry. You may use any of the varieties if you so like. Whatever you do, please select tender Brinjals without seeds, if you wish your curry to turn out tasty.

• Seedless tender Brinjals are creamy and melt in the mouth so wonderfully!

Sesame Spicy Masala:

• Roast the Sesame seeds on a very low flame. The seeds splutters and a nice aroma will spread to the Masala when it is made.

Dry Chilli and its replacement:

• Usually dry red chilli is used to make the spicy Sesame powder. If you like you may substitute the dry red chilli with green chilli and a little ginger. The taste will be different but very nice.

Ingredients

  • For the Sesame Spicy Powder:
  • 3 tbsp Sesame seeds
  • 6-7 Cloves Garlic
  • 8-10 Dry Red Chilli
  • 1/2 Kg Long, tender, purple Brinjals
  • For the Curry:
  • 3 tbsp Oil
  • 1 tbsp Mustard (Rai) Seeds
  • 1 tbsp Cumin (Zeera)
  • 2 Sprigs Curry Leaves
  • 1 tbsp Coriander(Dhaniya) Powder
  • Salt (To taste)
  • 1/2 tbsp Turmeric
  • 1/4 Cup Tamarind juice (Extracted from tamarind ball the size of one Amla)
  • Coriander (Kothmir) Leaves (A little)
  • 1 tbsp Red Chilli Powder

Instructions

  1. Roast Sesame seeds, and dry chilli in a pan on very low heat. When the seeds splutter take it out. Let it cool. Make a paste in a grinder with a little water.
  2. In the same pan, heat oil and prepare a seasoning by frying Rai, Zeera and Curry leaves.
  3. Add Brinjal pieces, salt, turmeric and Coriander (Dhaniya) Powder to the seasoning, and fry till the Brinjals change colour.
  4. Add the ground spicy Sesame powder, tamarind juice,Chilli Powder and a little water and cook on a medium flame until the oil floats to the top of the pan.
  5. Sprinkle Kothmir, mix and take off from the heat.
