Tips

  1. All the nuts and lentils should be slow roasted one by one to make tasty and aromatic powder.

  2. You could make the Powder beforehand use it to make the Carrot Fry whenever you feel like it. But fresh Powder always tastes better.

  3. The Water I have suggested is for the quantity of Carrots that I have taken. In case there is too much Water, drain it and use the Carrot pieces after letting them cool.

Ingredients

  • 1/2 kilo Carrot pieces
  • 250 ml Water
  • For the Powder
  • 1/4 cup Groundnuts/Peanuts
  • 1/4 cup Sesame Seeds
  • 1/4 cup Dry Coconut Powder
  • 1 tbsp Coriander Seeds
  • 1 tbsp Bengal Gram
  • 1 tsp Cumin Seeds
  • Salt
  • 7 - 8 Garlic
  • 1 tbsp Mirchi Powder
  • For the Fry
  • 3 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 Sprig Curry leaves
  • 1/2 tsp Turmeric
  • 2 tsps Green Coriander

Instructions

  1. Add Water to the Carrot pieces, cover and cook them fully.
  2. Roast Peanuts, Bengal Gram, Cumin Seeds, Sesame Seeds and Coriander Seeds one by one in a pan. Add dry Coconut Powder at the very end and remove it from the fire and let cool.
  3. Add Garlic, Mirchi Powder, Salt and make a Powder.
  4. Heat Oil and add Mustard Seeds and Curry leaves. Add some Turmeric too and then the cooked Carrot pieces.
  5. Fry on 7-8 minutes on a medium flame.
  6. Then add ½ Cup Powder and sprinkle Green Coriander before you remove the Fry from the fire.
  7. It tastes very good with hot Rice and Rotis.
