Andhra Style Gongura Mutton | Mutton Curry | How to Make Gongura Mutton
This Spicy, sour Andhra style Sorrel and Mutton curry will be all time favourite in every household.
This goes perfectly with Hot Rice or Fried or Masala Rice.
This dish is made both in Andhra and Telangana. Mostly made in Andhra, it is very simple to make and require a few ingredients only. If the Mutton is cooked well with proportionate Salt and Chilli powder, you get a perfect taste.
It is generally made in the same method by all Telugu people. Ingredients differ depending upon the region. I am following Guntur Style Curry here.This is an age old recipe.
The dish served in Restaurants is slightly different as they mix Mutton and Sorrel once the order has been placed so the Mutton doesn't absorb the sourness from the leaves and may taste bland.
The recipe I am showing here takes time but you will get a perfect taste.
Tips
Mutton:
1.Tender Mutton with bones should be used. Pieces should be of medium size.Do not cut the pieces too small as it becomes pulpy after it gets ready.
Oil:
- This recipe needs more Oil than usual. Oil makes the sourness from the leaves get absorbed thoroughly in the Mutton.Generally, dishes made with Mutton need more oil.
Sorrel:

There are two varieties of Sorrel leaves. White and Red. Red leaves are used as they are more sour than the white ones.This is used to make Pickles also.

If you are using White leaves add a little Tamarind to get some extra sourness.

Use only the leaves and not the stem in this recipe. Rinse the leaves thoroughly in water so that the fine sand is removed from the leaves.
For tasty Curry:
- Cooking Mutton patiently for at least an hour gives a good taste. Cooking in a cooker doesn't give a perfect taste though you can cook faster.
Cooking in Cooker:
- If you have time constraints, cook it in cooker with 750ml water and then follow the method prescribed.

Ingredients

For Masala powder
- 2 tbsp Coriander seeds
- 1 tsp Cumin
- 2 Inch Cinnamon
- 5 Cloves
- 1 tbsp Pepper seeds
- 5 Red Chillies
- 12 -15 Garlic pods (small)

For the Curry
- 1/2 cup Oil
- 1/2 Kilo Mutton
- 250 gms Sorrel leaves
- 1 liter Water
- Salt
- 2 tsp Chilli powder
- Curry leaves - 1 Sprig
- 1 cup Chopped Onion
- 2 tbsp Ginger Garlic paste
- 1/4 tsp Turmeric
- 3 tbsp Grated Garlic ((For Garnishing)
Instructions
- Heat 1/4 cup of Oil in a pan. Add Chopped Onions, Ginger Garlic paste, Turmeric, Mutton, Chilli powder, Salt, Water and cook with a closed lid on a medium flame, till the Mutton becomes soft. Add more water if required stirring it. (Follow the above tips if you want to cook in a cooker)
- In the mean time, roast all the ingredients used for Masala powder on a low flame till you get a good fragrance. Add Garlic pods at the end and grind it into a fine powder.

Once the Mutton is cooked, which may take an hour, add remaining oil, Sorrel leaves and cook till it becomes a gravy and the leaves become soft.
- Now add grated Garlic, Masala powder and close the lid and cook on a medium flame till the oil floats to the top.
- Remove it from the fire and serve hot with hot Rice.
