Andhra style Prawns masala is one of the simplest recipes that can be easily made by Bachelors and also Beginners. It has simple ingredients such as Prawns, Onions, Salt, Chilli powder that are always available at home.

This is made differently in different regions. I am making it in the Andhra style.This curry is a dry and spicy curry and goes well with Rice.

Tomatoes are usually used in this recipe but here I am not using them and making it with only Onion paste. Getting the proper texture of Prawns is important or else they stretch like rubber and stink. Follow the tips to get a perfect, soft Prawn curry.

Tips

Prawns:

1.I am using medium-sized lake Prawns .You can use Tiger Prawns, if available

  1. You have to marinate the Prawns along with Salt and Turmeric for at least half an hour,so that they absorb the salt well

  2. Water will evaporate from the Prawns once you start frying them in Oil.They will get half cooked if you cook for 4 minutes. Keep them aside. Remaining 50% will get cooked in the gravy and taste spicy and soft.

Oil:

1.More than usual quantity of Oil is required to make this curry, then only it tastes good.

Tomatoes:

  1. I haven't used Tomatoes in this recipe,but you can use 2 Chopped Tomatoes and cook them till they become soft. Add salt and chilli powder if required.

  2. If at all the Curry turns out to be bitter either by burning spice paste or using excess masalas, you can reduce it by adding a little Lemon juice in the end.

Ingredients

  • 250 gms Washed and cleaned Prawns
  • Salt - To taste
  • 1/4 tsp Turmeric
  • For Onion paste
  • 2 Chopped Onions
  • 4 Green Chilli
  • Ginger-1 inch
  • 8 Garlic
  • For Masala Curry
  • 1/4 cup Oil
  • 2 Strands Curry leaves
  • 1 tsp Chilli powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • Salt
  • 1/2 tsp Garam Masala
  • Coriander leaves-small bunch

Instructions

  1. Mix Salt and Turmeric thoroughly with the Prawns and leave them aside for half an hour.
  2. Grind all the ingredients for Onion paste into a smooth paste by adding water.
  3. Take a pan and pour some Oil and fry the soaked prawns to about 50% (Follow the tips for this) and keep them aside.
  4. Add a little more Oil and put Curry leaves and the Onion paste and fry on a medium flame till the Oil floats to the top.
  5. Add Chilli, Coriander, Cumin powders, Salt and cook on a high flame, adding required water.
  6. Add the half cooked Prawns into this gravy and cook till it thickens.
  7. Garnish it with Garam masala and Chopped Coriander leaves and remove from the flame and serve hot.
