Everyone loves “Potato fry. And it is such a crunchy accompaniment for Tomato Dal, Sambar and Rasam. Children love to eat the fries just like that too.

It is effortless to make Potato Fry. Add Potato pieces to oil, fry and add Salt and Mirchi Powder; mix well, and you are done. In this simple recipe, I have added a different flavour adding Fenugreek Leaves to Potato. It has a mild bitterness and nice Mirchi spice.

Tips

Potatoes:

  1. Always use Potatoes that are fresh and have thin skin so that the fry is fresh and crunchy. Use those Potatoes used to make chips.

  2. Before you fry Potatoes, peel them, dice them and soak them in water for 30 minutes, Then the Potatoes lose their surface starch and come out crunchy when fried.

Fenugreek Seeds and Leaves:

  1. If those few Fenugreek Seeds in the fry are roasted red, they give a savoury taste. Or the fry turns bitter. Those who do not like it can skip the Fenugreek Seeds.

  2. If you like that mild bitterness, add the small Fenugreek leaves. Or use the big leaves.

Ingredients

  • 1/2 Kg Potatoes
  • 1/2 tsp Fenugreek Seeds
  • 2 Red Chillies
  • 1/2 cup Oil
  • 1 cup Chopped Fenugreek Leaves
  • 1 tbsp Mirchi Powder
  • Salt
  • 1 tbsp Coriander Powder

Instructions

  1. Heat oil and add the Potato pieces, soaked in water for 30 minutes, and fry till they turn light golden. Once they turn golden, remove and set them aside.
  2. In the same oil, add Fenugreek Seeds and Red Chillies and roast until the Fenugreek Seeds turn red.
  3. Add the Chopped Fenugreek Leaves and fry for 2 minutes until the raw smell goes off and the leaves turn soft.
  4. Add the Potato pieces, Salt, Mirchi Powder and Coriander Powder and mix well. Cover and cook on medium flame until oil separates.
  5. After the Fry is ready, remove it into a vessel, cover it with a sieve so that the Potato pieces do not become soft and stay crisp.
  6. This Fry is excellent with hot Rice and Ghee and an accompaniment with Sambar, Rasam and Curd Rice.
