Tips

Basmati Rice :

I have used one cup.. which is 150 grams of Basmati Rice. You could use Sona Masuri Rice as well.

If you want the Rice to come out fluffy, soak Rice for an hour. Add it to boiling water to which a tbsp of Salt has been added. Cook it to 90%, drain off the water and spread the Rice on a plate and let it cool. Then you get fluffy Rice.

Ghee:

I have used Ghee for the Pulao to get a nice fragrance but if you like, you could use Oil or mix both Ghee and Oil and use.

Onions:

Onions should be sliced and fried till they are golden for the Pulao to get a great taste.

And..you could add Salt and Spices as per your taste.

Ingredients

  • 5 Boiled Eggs
  • 2 tbsps Ghee
  • 1 tsp Black Cumin
  • 1 Biryani Leaf
  • 4 Cardamoms
  • 4 Cloves
  • Onion thinly sliced
  • 1 tbsp Ginger Garlic Paste
  • 3 Green Chillies chopped
  • 1/2 tsp Roasted Cumin Powder
  • Salt
  • 1/2 tsp Mirchi Powder
  • 1/2 tsp Turmeric
  • 1/2 tsp Garam Masala
  • 1 cup Cooked Rice (110 gms)
  • Chopped Green Coriander - a little
  • Chopped Mint Leaves - a little

Instructions

  1. Melt Ghee and add Black Cumin, Biryani Leaf, Cardamoms and Cloves and fry.
  2. Add the thinly sliced Onions and fry until they turn golden.
  3. Add Ginger Garlic Paste, Green Chillies, Cumin Seeds Powder, Turmeric, Salt, Mirchi, Garam Masala and mix well and fry.
  4. Add the boiled eggs and fry until the top layer of the Egg turns golden.
  5. After the Eggs are fried, add the cooked Rice, Chopped Coriander and Mint Leaves and toss on a high flame. This Pulao tastes good even after it cools down.
