Garlic Chicken Fry This starter dish is made by marinating boneless chicken in garlic masala paste, and tossing it into a mixture of cashew and curry leaves after deep frying. It is always a hit as a starter!

Tips

Chicken:

Choose a young bird. If the Chicken pieces are tough the Masala will not go into the pieces when marinated. The pieces tends to turn rubbery when fried, if the bird is tough. It is always advisable to buy a dressed chicken weighing approximately 1 Kg and then cutting into required pieces.

The chicken pieces should be marinated in the Masalas at least for one hour for the pieces to absorb the flavours well.

Garlic Powder:

Garlic is the ingredient which takes the tastes of this dish to another level altogether! Toss the pieces in Garlic powder at the very end. You will see how the flavours come out divinely! This powder is available easily on –line. If the Garlic Powder is not available you can sprinkle Chaat Masala. This will also enhance the taste quite nicely.

Food Colour:

This recipe does not include red Chilli Powder. The spiciness comes from the combination of Green Chillies and Garlic. Because of this, the dish will be light in colour. If you like to improve the presentation and visual delight, add a little food colour. You may leave it out if you do not like the idea.

Frying Technique:

Put in a few pieces at a time and fry on medium heat until the pieces start to change colour. Once the colour starts to change raise the flame and fry on a high flame till nice and brown.

Ingredients

  • 400 gms Boneless Chicken Pieces
  • Garlic Masala Paste:
  • 6 - 8 Green chillies
  • 1 Onion (small)
  • 25 - 30 Garlic Cloves
  • 2 Sprigs Curry Leaves
  • Marinade:
  • Salt – To Taste
  • Turmeric – A little
  • 1 tsp Garam Masala
  • 1 tsp Roasted Dhaniya Powder
  • 1 tsp Roasted Cumin (Zeera) Powder
  • 3 - 4 drops Red Food Colour
  • ½ tbsp Vinegar
  • 3 tbsp Corn Flour
  • Oil – For frying
  • For Final Tossing:
  • 2 tbsp Oil
  • 3 tbsp Cashew (Kaju)
  • 2 Green Chiilies (Slit)
  • 1 tbsp Garlic
  • 2 sprigs Curry Leaves
  • 1/2 tsp Garlic Powder / Chaat Masala

Instructions

  1. Grind the ingredients for the Garlic Masala into a coarse paste.
  2. Marinate the Chicken pieces in the Garlic Masala and other spice powders, a little vinegar, and the food colour. Rub in the marinade over the pieces nicely. At the end, add Corn Flour to give a good coating to the pieces. Refrigerate the marinated Chicken for at least one hour.
  3. After one hour, heat oil in a Kadai and fry the pieces, a few at a time on medium flame. Fry to a rich brown.
  4. To prepare the tossing mixture, heat a little Oil and fry the Cashew and the other ingredients on high flame till Cashew changes colour.
  5. Now add the fried Chicken pieces and Garlic Powder to the fried Kaju. Toss well on a high flame. Vellulli Kodi Vepudud (Garlic Chicken) is ready. Serve hot and enjoy!!
