Here is a detailed recipe with step-by-step images and a video. Kadai Paneer is a famous Punjabi recipe. It is spicier than most other Punjabi Paneer recipes and tastes very good.

This Kadai Paneer recipe is entirely in the homemade style. I am not adding Cashew Nut paste and others as they do in restaurants and am giving a simple recipe. But it does not lag behind the restaurant Curry in either taste or spice. It has thick Gravy and very tasty. And the method is pretty easy too.

In restaurant-style Kadai Paneer, they roast the Spices until they turn aromatic, powder them and add them to the Curry. But I am making a Curry that is simple yet tasty.

It is a spicy Curry, though, and those who like spice will love it.

Tips

  1. Grind the Masala ingredients into a coarse powder.

  2. The first batch of Onions we add should be chopped into thin slivers and should be fried until golden. The Onion and Capsicum we add later should be broadly chopped like rose petals.

  3. Capsicum and Onions should be cooked only for two minutes. It is tasty to get the crunchy pieces when you eat the Curry.

  4. If you add hot water to cook the vegetables, then the flavours of the Spices you add will not get diluted. If you add cold Water, the Spices lose their flavour.

  5. Paneer becomes soft if it is placed in hot water 10 minutes before it is added to the Curry. And it tastes better too.

  6. The Ghee that we add at the end gives a nice aroma to the Curry. If you don’t like Ghee, you can drop it.

Ingredients

  • 200 gms Paneer
  • 1/2 cup Onions Thinly Chopped
  • 1 cup Tomato Puree (200 ml)
  • 1 Diced Tomato
  • 1 Onion chopped into big pieces
  • 10 - 15 Half Capsicum pieces
  • 1 tbsp Ginger Garlic Paste
  • 1/4 cup Oil
  • 1 tsp Ghee
  • 1 tbsp Coriander Seeds Crushed
  • 1 tsp Cumin Seeds
  • 1 tsp Fennel Seeds/Saunf
  • 3 Red Chillies
  • 1 tsp Coriander Powder
  • 1 tsp Roasted Cumin Seeds Powder
  • Salt
  • 1/4 tsp Turmeric
  • 1 tsp Mirchi Powder
  • 1/2 tsp Garam Masala
  • 150 ml Water

Instructions

  1. Heat oil and add crushed Coriander Seeds, Cumin Seeds, Fennel Seeds, Red Mirchi and roast.
  2. Add the chopped Onions and fry till the onions turn golden. Then add Ginger, Garlic Paste and mix.
  3. Add the big pieces of Onion and Capsicum pieces and cook until the onions turn soft.
  4. Add Salt, Mirchi Powder, Garam Masala, Coriander Powder, Roasted Cumin Seeds and 1 tbsp Water and fry well.
  5. Add Tomato Puree and fry till the Oil separates and cover and cook on medium flame.
  6. Then add the Tomato pieces, mix and let the Tomato pieces cook well. The Tomato pieces should stay as pieces.
  7. After the Tomato pieces are cooked, add 150 ml hot Water and Paneer pieces. Cover and cook for 5 minutes. Add Ghee and remove it from the fire.
