Fry Idly is a great accompaniment for evening Tea or even a simple dinner. If you are in Chennai or any other place in Tamil Nadu, you can spot and smell the Fry Idlis in the evenings on street food carts.

This recipe, that became famous as street food in Tamil Nadu is now famously available in restaurants and is even presented at weddings as a special item. That is the craze for the common Idly.

How to get the taste of street food:

This recipe appears to be very simple but if you want authentic taste of street food, every step. from frying Onions to the end of the recipe, everything should be tossed on a high flame. Only then you can get the original Madras Fry Idly with a smoky flavour.

How to ensure the Fry Idly is tasty:

  1. If the Idly is fully cool, then they won't get mashed while tossing. Hot Idlies will break into pieces

  2. Add Idlis to the water that remains after frying the Tomatoes and toss on a high flame without letting the Idlies get smashed. If you add the Idlis after the moisture is totally gone, then the flavours don't get absorbed by the Idlis. The flavours just stay on the surface and is not so tasty.

  3. I am using Button Idly but if you are using regular Idlis, make them into 4 pieces.

  4. If you like, toss the Idlis in hot Oil and fry well. That gives a great taste too.

Ingredients

  • 6 Cooled Idlis (Cut into 4 pieces each)
  • 2 tbsp Oil
  • 1/2 tsp Mustard Seeds
  • 2 Sprigs Curry leaves
  • 1/2 cup Chopped Onions
  • 2 Green Chillies chopped
  • Salt
  • 1 tsp Ginger Garlic Paste
  • 1 tbsp Coriander Powder
  • 1 tsp Mirchi Powder
  • 1 cup Tomato pieces
  • 1/3 cup Water
  • 1 tsp Lemon Juice
  • 1/4 tsp Garam Masala
  • Green Coriander – a little

Instructions

  1. Heat Oil and add Mustard Seeds and Curry leaves.
  2. Add chopped Onions, Green Chilli pieces and Salt and toss on a high flame until the Onions turn a deep rose colour.
  3. Add Coriander Powder and Mirchi powder to the softly cooked Onions and fry on a high flame for 30 seconds.
  4. Add the Tomato pieces and mix on a high flame until they are softly cooked and Oil comes to the surface.
  5. Add Lemon juice and Water and cook on a high flame until some water is remaining.
  6. Add the Idly pieces and mix slowly until the flavoured water is absorbed by the Idlis. Fry on a high flame for 2-3 minutes.
  7. Sprinkle some Garam Masala, Green Coriander and serve hot.
