I have made many Rice recipes. And every time I think this would be really good and you will really like it. What to do? I just love Rice recipes. And for those who like Rice dishes like me, this Mexican Rice is easy to make and great to taste. There is a Mexican Chicken Rice recipe too that tastes great. I will post it soon.
Mexican Rice tastes spicy and strong just the way Indians like. It has more or less the ingredients that we have in every kitchen, except Jalapenos. Here are a few tips for this simple recipe.

Mexican Beans:

Mexican Beans are like our Rajma, the Kidney beans, but are black. I could not find them in Hyderabad so I have used Kashmiri Red Rajma that is quite similar to them. You could use any variation of Rajma Beans.

Rajma has to be soaked for at least 5 hours and then cooked to 80 % in the cooker on a medium flame till four whistles. It gets cooked the rest of the way in the cooker along with the rice.
Capsicum or Bell Peppers:
- Mexican Rice has coloured Capsicum. So I have used Yellow, Red Green Capsicum in the recipe. If you want, you could just use the Green Capsicum that is readily available.
Frozen Corn, Green Peas:
- I have used frozen Green Peas so I added them to the Rice but if you are using fresh Green Peas, add them after the Onions are fried and then add Tomatoes and fry until he Oil comes to the surface.
Spice:
- I have made it with medium spice. You could add or reduce Salt and Mirchi as per your taste.

Ingredients
- 4 tbsp Oil
- 2 tbsp Garlic chopped
- 1 Onion (Medium sized Chopped)
- 3/4 cup Tomato Paste (Taken from 2 big Tomatoes)
- 1.5 cup Basmati Rice (250 gm soaked for an hour)
- Salt
- 1 tsp Mirchi
- 3/4 tsp Oregano
- 1/2 tsp Roasted Cumin Powder
- 1/2 tsp Pepper Powder
- 2.5 tbsp Tomato Ketchup
- 1/4 cup Yellow Capsicum chopped
- 1/4 cup Red Capsicum chopped
- 1/4 cup Green Capsicum chopped
- 1/4 Frozen Sweet Corn
- 1/4 cup Frozen Green Peas
- 1/4 cup Jalapenos
- 1/2 Lemon - Lemon Juice
- 1/4 cup Boiled Rajma
- 2.5 cup Water
- 2 tbsp Spring Onion Chopped
- 2 tbsp Green Coriander Chopped
Instructions

Heat oil and add chopped garlic and fry for 30 seconds. Add chopped Onions and fry for a minute.

In the fried Onions, add the Tomato paste and the rest of the spices and salt and fry until oil separates.

Then add the Yellow Red Green Capsicum and fry for 2 minutes.

Then add the soaked Rice and mix and fry for 3 minutes. Then add the frozen Corn, Green Peas, Rajma Beans, Tomato ketchup. Pour water and cover and cook on a high flame till 50%.

In the Rice cooked to 50%, add Jalapenos, Spring Onion, Green Coriander and Lemon Juice and mix slowly. Cook on a medium flame for 5 minutes. Leave it on the stove for 15 minutes and serve afterward.
