Tips

Mexican Beans:

  1. Mexican Beans are like our Rajma, the Kidney beans, but are black. I could not find them in Hyderabad so I have used Kashmiri Red Rajma that is quite similar to them. You could use any variation of Rajma Beans.

  2. Rajma has to be soaked for at least 5 hours and then cooked to 80 % in the cooker on a medium flame till four whistles. It gets cooked the rest of the way in the cooker along with the rice.

Capsicum or Bell Peppers:

  1. Mexican Rice has coloured Capsicum. So I have used Yellow, Red Green Capsicum in the recipe. If you want, you could just use the Green Capsicum that is readily available.

Frozen Corn, Green Peas:

  1. I have used frozen Green Peas so I added them to the Rice but if you are using fresh Green Peas, add them after the Onions are fried and then add Tomatoes and fry until he Oil comes to the surface.

Spice:

  1. I have made it with medium spice. You could add or reduce Salt and Mirchi as per your taste.
