Muskmelon Sharbath - This Sharbath made by boiling Sago rice in milk and served cold with Jelly and muskmelon pieces in Musk Mellon juice is a real summer cooler.

There are so many varieties of Sharbaths. This Sharbath is delightful with its combination of Musk Mellon juice and milk with tongue- teasing tiny bits of Sago, Raspberry Jelly and muskmelon pieces. This Sharbath is a sure super hit if served at social get togethers or children's Birthday parties.

Tips

Jelly:

• I have used the Raspberry Jelly. Of course army other fruit flavored Jelly is as good. I prefer Raspberry Jelly because of its attractive colour and excellent fruity flavour.

• Do follow the preparation method for Jelly as per the instructions on whatever pack you buy. Once the Jelly is set, cut it into small pieces.

Sago Rice:

Soak the Sago Rice well before starting to cook. Continuously stir the milk while Sago boiled to prevent it sticking at the bottom. Studying also promotes faster cooking.

Musk Melon ( Kharbooza):

If ripe musk melon is chosen, it needs less sugar to be added. The sweetener can be adjusted according to the sweetness of the fruit.

Condensed Milk:

Condensed Milk gives a good flavour to the Sherbet and adds instant sweetness. Adding sugar things out the Sherbet. If you wish to add Sugar, it's better to allow your milk to thicken before adding it.

Essence:

I wanted to enhance the fruity flavour of the Sharbath and therefore added Mango essence. If it is not to your liking, you may add Vanilla Essence or any other fruit flavour.

Ingredients

  • ¾ cup Sago Rice
  • ¾ litre Milk
  • ¾ - 1 cup Condensed Milk
  • 750 gms Kharbooza
  • 1 packet Jelly
  • Water- to boil Sago Rice

Instructions

  1. Wash the Sago and soak in water.
  2. In boiled water, mix the Raspberry Jelly Crystals. Once the Crystals are dissolved, pour the mixture onto shallow dish and leave it for an hour to set.
  3. Boil the soaked Sago in double quantity of water. Keep stirring until it is fully cooked.
  4. Boil Milk. Add cooked Sago in it until well cooked. Add Condensed Milk and Essence. Mix thoroughly. Let it cool down completely.
  5. Meanwhile take the juice out of ¾ th of the Musk Melon. Chop the remaining quarter of the fruit into small pieces. Keep aside.
  6. Cut the set jelly into small pieces.
  7. Mix Jelly pieces, Kharbooza Juice and Kharbooza pieces into the cool Sago milk. Leave the mixture in the refrigerator for 2 - 3 hours) and Serve cold.
