Okra fry is a favourite for everyone. It tastes great with hot Rice and Ghee. This is made frequently in Andhra and even in our home. It can also be eaten as an accompaniment with Dal or Andhra Style Sambar.

This Okra Fry stays fresh for at least 3 days and is a pretty useful recipe for bachelors and working people.

Tips

  1. If the Okra are tender, then there will not be too many seeds and the Fry tastes better.

  2. The Okra should be washed and dried in air and then cut into inch-long pieces. If they are cut after they are dry, then they are not too sticky. And if the pieces are inch long, then they will not shrink when fried.

  3. The Garlic spicy mixture should have Salt and ground to a coarse paste or it becomes a moist lump. And will not get properly mixed into the fry.

  4. The Oil that is remaining from frying the Okra can be used for seasoning or to make an Omelette.

  • Prep Time 5 mins
  • Cook Time 15 mins
  • Total Time 20 mins

Ingredients

  • 1/2 kilo Okra pieces
  • 1/4 cup Peanuts
  • 2 Sprigs Curry leaves
  • Salt
  • 1 tbsp Mirchi Powder
  • 7 - 8 Garlic
  • 1 tsp Cumin Seeds
  • Oil to fry

Instructions

  1. Heat Oil and add inch-long Okra pieces and fry till golden. (Not too golden as if they are too crispy they become bitter when they cooldown)
  2. Add Garlic, Cumin Seeds, Salt and Mirchi powder and grind to a coarse mixture and mix in the hot, fried Okra pieces.
  3. In the same Oil in which the Okra pieces, add Peanuts and Curry Leaves and mix it in the Okra pieces.
  4. The Fry should be covered with a sieve and not a plate for 2-3 hours and then the Fry stays crisp. If it is covered with a plate, they become soft.
