Prawns Dum Biryani | Shrimp Biryani | Prawn Biryani Recipe | Dum Style Shrimp Biryani - Various kinds of Hyderabadi style Biryanis are famous and unique in their own way. Whenever the aromatic Biryani is made, a festive atmosphere is created at home. When compared to Chicken and Mutton Biryani, Prawn Biryani is simpler and is cooked very fast.
Generally, in Hyderabadi Biryanis, we use more or less the same masala ingredients, only the proportions vary. Prawn Dum Biryani with Mirchi Ka Salan will be a super hit for a weekend meal and on special occasions.

Tips
DUM:
-
Prawn Biryani doesn’t need any Rice gruel for cooking on Dum like Chicken or Mutton, but the water which naturally Prawns have, is sufficient to make Dum.

Add 3 tbsp water if you are making the Biryani with Sona Masoori Rice but it is not required if you are using Basmati Rice.
BASMATI RICE:

Spread a layer of Rice cooked to 80 % on the marinating Prawns and leave it on Dum for the Biryani to get cooked in the water that Prawns naturally leave.

When you mash the Rice grain between your fingertips, you should feel that it will be cooked in another 5 mins. That is when you consider it as 80% cooked.
SONA MASOORI RICE/ OTHER VARIETY RICE
- Rice should be 80% done irrespective of any variety that you use, but add 3 tbsp of water to this variety of Rice.

Ingredients

For marinating prawns
- 300 gms Fresh Prawns
- 4 Cardamoms
- 4 Cloves
- 1 Black Cardamom
- 1.5 Inch Cinnamon stick
- 1 tsp Black Cumin
- 1 Bay leaf
- 2 tbsp Mint chopped
- 2 tbsp Green Coriander leaves (chopped)
- 1 tbsp Coriander Powder
- 1 tsp Cumin Powder
- 1 tbsp Red Chilli Powder
- 1 tsp Garam Masala
- 1/4 tsp Turmeric
- Salt – For taste
- 2 tsp Lemon Juice
- 3 tbsp Ghee
- 1/2 cup Fried Onions (chopped)(Birista)
- 3 Green Chillies (slit)
- 1 tbsp Ginger Garlic Paste
- 175 ml Curd

For Biryani Rice
- 2 liters Water
- 1 tsp Black Cumin
- 3 Cardamoms
- 4 Cloves
- 1 Black Cardamom
- 1.5 Inch Cinnamon
- 1 Bay leaf
- 3 Slit Green Chillies
- 1.5 tbsp Ginger Garlic Paste
- 3 tsp Salt
- 1.5 cup Basmati Rice (250 gm)
- 2 tbsp Rose Petals (Dried)

For Dum
- 2 tbsp Fried Onions (Chopped) (Birista)
- 3 tbsp Ghee
- 1/2 tsp Garam Masala
- 1 tbsp Saffron Water
Instructions

Marinate Prawns with all the listed ingredients and leave them for 1 hour.

Boil Water in a deep bottomed pan, add all the ingredients required for Biryani Rice
and bring it to a proper boil.

Now add soaked Basmati Rice and dried Rose Petals to the boiling water and cook until its 80% done.

Spread a layer of the 80% cooked Rice onto the marinating Prawns.

Sprinkle and spread all the ingredients which are kept for Dum on top of the 80% cooked Rice.

Cover the vessel with a tight lid and seal it with Maida Flour. Dum for 5 mins on a high flame and for 7 mins on a low flame and switch off the stove. Leave it to rest for 20 mins.

Mix it well and enjoy your Prawn Dum Biryani with Mirchi Ka Salan.
