Tips

  1. Check the taste of Ridge Gourd and cut them into medium sized pieces.Do not cut then very small ,as they tend to become a paste during cooking

  2. Tender Ridge Gourds are ideal to use

  3. Gourds do not need much oil to cook so just a little oil is enough

  4. Coconut and Groundnut make the curry mild and sweet, so add Chilli powder as per your choice

  5. Consume it fresh,as it may get spoilt quickly in summers

  6. Raw coconut tastes better than dry coconut

  7. Use less Salt and Spice,if you want to eat with Rotis

Ingredients

  • 1/4 cup Bengal Gram (Roasted)
  • 1/4 Raw Coconut pieces
  • 2 tbsp Oil
  • 1 tsp Mustard
  • 1 tsp Cumin
  • 2 Sprig Curry leaves
  • 2 Red Chilli
  • 1/4 tsp Turmeric
  • Asafoetida
  • 1 Onion (Medium sized chopped)
  • 2 tsp Coriander Powder
  • 1 tsp Chilli powder
  • Salt - To taste
  • 1/2 Kg Ridge Gourd pieces
  • 150 ml Water
  • Coriander-one bunch

Instructions

  1. Make a fine paste of roasted Groundnuts and coconut.
  2. Heat some oil in a pan, add Mustard, Cumin, Red Chilli, Curry leaves, Asafoetida, Turmeric for seasoning.
  3. Add finely chopped Onions and fry.
  4. Now add Coriander powder, Salt, Chilli powder, water and fry it till the oil floats to the top.
  5. Add Ridge Gourd pieces and cook for 2-3 minutes. Add a little water, groundnut, coconut paste, mix well and leave it on a low flame for 8-10 minutes.
  6. Garnish it with chopped Coriander and remove it from fire and serve.
