Egg:

Eggs are beaten directly into the boiling gravy. It takes hardly 10 minutes for the Egg to cook and absorb the Salt, Chilli and Masala and taste good

Egg will not smell bad when you put it in the gravy

Break the Egg over the gravy in different places.It gives an even taste.
Tomato:
- Ripe Tomatoes which are a little sour are ideal for this gravy.You can use a little Tamarind if required
Other Tips:
1.One Onion for 4 Tomatoes and 4 Eggs. Same proportion can be followed if you want more quantity.

Ingredients
- 3 tbsp Oil
- 1 tsp Mustard
- 1 tsp Cumin
- 1 Chopped Onion
- 4 Tomato
- 1/4 tsp Turmeric
- Salt
- 3 Slit Green Chillies
- 1 tsp Ginger Garlic paste
- 1 Strand Curry leaves
- 1 tbsp Coriander powder
- 1.5 tsp Chilli powder
- 4 Eggs
- 1/2 liter Water
- 1/2 tsp Pepper powder
- 2 tbsp Chopped Coriander leaves
Instructions
- Heat some Oil in a pan and fry Mustard, Cumin seeds and allow them to splutter. Then add chopped Onions, salt, Turmeric and fry until the Onions become soft.
- Once the Onion becomes golden in color, add Tomato pieces, slit Green Chillies, Salt and cook till the Tomatoes become a pulp.

Add Coriander powder and Chilli powder to this Tomato pulp.
- Pour 1/2 litre Water in this and boil it on a high flame .
- Beat four Eggs in the gravy and do not stir it.

Reduce the flame to medium and leave it for 10 minutes so that the Egg is cooked properly.
- Add Pepper powder and chopped Coriander leaves. Now slowly mix the Eggs with the gravy and serve it hot. This Curry goes well with Rice.
