Ridged Gourd Scrambled Eggs | Turai Egg Bhurji Masala | Beerakaya Egg Burji | Peerkangai Muttai Poriyal Recipe- Ridge gourd Scrambled Egg is a quickie recipe that works really well for bachelors and those who have hectic work schedules and need to take a lunch box.

It is a tasty curry with a balanced flavour and goes well with rice and chapati. And it is a good curry for dinners too. We know Scrambled Eggs that is made with Onions and Green Chillies. We usually make that at my home along with hot rice, Chapatis and Puris.

Tips

How do you always ensure a great taste?

  • Scrambled Eggs needs a lot of oil and should be fried well. Then you get the taste.

  • For the regular Onion Scrambled Eggs, it is tastier when you add two eggs to two Onions.

  • If the Egg is fried a little after added to the pan, the taste of the Egg can be clearly felt in the Curry. If it is stirred amd mixed immediately after dropping into the pan, it becomes flaky. Both tastes are good.

  • For great taste, tender Ridged Gourd should be cut into similar pieces after peeling.

  • The Ridged Gourd peels can be made into a Chutney by adding two Tomatoes, one Onion, 7-8 Green Chillies to oil and letting it cook and then ground into a paste. This is good for both rice and Rotis.

What other vegetables can be added?

This can be made with a few little changes and with any other vegetable. But you need to understand the kind of vegetable you are using and assess how much it should be fried, when and how much should be added, then you get a tasty dish whatever vegetables you use.

Ingredients

  • 400 gms Tender, peeled pieces of Ridged Gourd
  • 4 Eggs
  • 2 Onions
  • 2 Vertically Sliced Green Chillies
  • 1 tsp Grated Ginger
  • 1 tsp Cumin seeds
  • 2 Red Chillies
  • 1 Sprig Curry Leaves
  • 2 tsp Green Coriander
  • 1/4 tsp Turmeric
  • 1 tsp Red Mirchi Powder
  • Salt
  • 1 tsp Coriander Powder
  • Garam Masala - a pinch
  • 1/4 cup Oil

Instructions

  1. Heat oil and fry Cumin seeds, Green Chillies, Curry Leaves, Red Chillies, and Ginger.
  2. Add chopped Onion and fry till the raw smell is gone. Add Ridged Gourd pieces, add Mirchi Powder, Turmeric, and Salt, mix well. Cover it and cook on medium flame until oil separates.
  3. When the oil separates, break the Egg on the Curry, and without stirring, cover it and let it cook on a medium flame for 3-4 minutes.
  4. After three minutes, cut it into pieces with a ladle, mix it well and fry till the oil separates from the Curry. It takes about 12-15 minutes for the Curry to cook and oil to separate.
  5. When the oil comes to the surface, add the chopped Green Coriander and Garam Masala and remove them from the fire.
  6. It tastes excellent with Rice, Rotis as well as Puris.
