In South India, there are hundred different ways of making Sambar. Though we all use the same ingredients to make it, each household, caste, region gets Sambar with a different taste. One such Sambar is the Wedding Sambar. It tastes better than the one which we make at home. This is the recipe with which it is made at Telugu weddings.

Both Telugu and Tamil people make the Sambar almost the same way.Tamilians use freshly ground powder and Telugus use ready made sambar powders. Here, in this recipe, I used readymade Sambar powder, which is very aromatic,flavorful and gives a delicious taste.

Tips

For Best Sambar:

  1. Good quality Sambar powder is very important. Sambar should be properly boiled to get the right taste and consistency.

VEGETABLES:

  1. Use a variety of vegetables in small proportions.

  2. In Wedding Sambar, pieces of Drumsticks, Shallots, Brinjal and Tomato are a must.

  3. Boil the vegetables in Tamarind juice to a right consistency otherwise when they are mixed with the Sambar they tend to get over cooked and become mushy. Vegetables like Pumpkin and Carrot while boiling, should be checked with a fork and they should be done only 80%.

  4. Use only 4 to 5 pieces each of every vegetable otherwise your sambar will be more of vegetables and less of pouring consistency.

  5. Cut vegetables into big pieces.

Sambar Thickness:

  1. Wedding Sambar will be thick in consistency. So use either soaked Moong dal (Green Gram) or Chana dal (Bengal Gram).

Tempering:

  1. Garlic is optional

  2. Seasoning two times gives a nice aroma and taste to the Sambar. First with Oil and second one with Ghee.

  3. If you feel the Sambar is too thick add some boiled water and bring it to the consistency you desire and adjust Salt accordingly.

Ingredients

  • 1/3 cup Tur dal (Red Gram) (soak for one hour)
  • 1/4 cup Moong dal (Green gram) (soaked for 1 hour)
  • 1/4 tsp Turmeric
  • 3 cups Water
  • 250 ml Tamarind juice (extracted from 75 gms Tamarind)
  • 1.5 tbsp Red Chilli powder
  • 2 tsp Ready made Sambar powder
  • Salt
  • 2 tbsp Oil
  • 1/2 tsp Mustard
  • 1/4 tsp Fenugreek
  • 1/4 tsp Asafoetida
  • 1 Sprig Curry Leaves
  • 20 Shallots or small onions
  • 3 French beans (cut into 2 inch pieces)
  • 4 Green Chillies (slit)
  • 6 - 7 Ash gourd pieces
  • 4 - 5 Brinjal pieces
  • 6 - 7 Drumstick pieces
  • 7- 8 Sweet Pumpkin pieces
  • 1/4 cup 1 inch Carrot pieces
  • Capsicum pieces cut into half
  • 2 Tomatoes (big pieces)
  • 550 - 600 ml Water
  • 1 tsp Coriander powder
  • 1 tbsp Jaggery
  • FOR TEMPERING
  • 2 tsp Ghee
  • 1/2 tsp Mustard seeds
  • 3 Red chillies
  • 1 tsp Jeera /Cumin
  • 2 Sprigs Curry Leaves
  • Coriander –Small bunch

Instructions

  1. Pressure cook the Lentils with enough Water and a pinch of Turmeric.
  2. Mash the Cooked Dal.
  3. Heat oil in a vessel, add Mustard seeds, Fenugreek, when Fenugreek seeds turn dark, add Curry Leaves and Asafoetida and fry.
  4. Add Shallots and fry till they turn golden brown. Now add the remaining vegetables. Stir them properly. Close the vessel with a lid and steam for 3-4 mins.
  5. Meanwhile, add Sambar Powder and Red Chilli powder to Tamarind juice and set aside.
  6. Add the Tamarind juice to the steamed Vegetables and cook till they are done 80%.
  7. Add 250 ml water to the mashed Dal and boil for 15-20 mins. Add Jaggery and boil for another 5 mins.
  8. Now add seasoning to the Sambar with Ghee, add chopped Coriander, boil for another final 3 mins. Your Wedding Sambar is ready to serve.
