That is why, it is not just Tamil Nadu but the entire country is a fan of the Chettinad Cuisine.

This Potato Fry is not the regular Fry with Salt and Mirchi Powder but is interestingly different. Add this to hot rice with Ghee or Curd Rice. And enjoy a whole new experience.

Tips

• Use thin-skinned Potatoes for a crisp and crunchy fry

• Potatoes can be peeled or you can leave the skin on. In case you want to fry them with the skin on, ensure that you wash them thoroughly.

• Boil the Potatoes to 80 % without covering them. Rest of the cooking will be done when you are frying them in Oil. If they are too softly boiled, the cubes will be smashed when you are frying them.

• This Masala Powder is my recipe but you can add spices to taste your palate.

• Potatoes are fried much better in Iron Pans than Non-Stick Pans.

Ingredients

  • 1/2 kg Boiled and Diced Potato Cubes
  • 1/4 cup Oil
  • 1/4 spoon Turmeric
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • 1 Curry leaves
  • For Masala Powder
  • 2 tsps Coriander Seeds
  • 1 tbsp Bengal Gram
  • 1 tsp Black Gram
  • 1 tsp Saunf (Fennel Seeds)
  • 1 inch Cinnamon
  • 5 Cloves
  • 1 Star Anise
  • Kapok Buds
  • 6 Red Chillies

Instructions

  1. Roast the ingredients for Masala powder on a low flame until they give out an aroma. Grind the mixture into a coarse powder.
  2. Heat Oil and add Mustard Seeds, Cumin Seeds, Curry leaves, and Turmeric. Then add the boiled and diced Potato cubes and fry them on medium flame until they become crisp.
  3. Do not cover the Potatoes but fry on medium flame. It takes about 20 minutes for them to get fried.
  4. Now add the Masala Powder, mix it well, leave it on the stove for 3-4 minutes and then remove it from the fire.
