Usually, Cluster Beans do not offer much variety by way of recipes. Many people do not like Cluster Beans due to the high percentage of fibre in them. But follow this recipe and people will ask for it.

This recipe is very simple. Even bachelors and office-goers can make it quickly. Those who want to add an element of speciality to the daily vegetables will like this recipe.

Tips

  1. Cluster Beans: Use only tender Cluster Beans.

  2. I have cooked the Cluster Beans without removing the fibrous string that lines the Beans. You can remove the string too. But when you cook 80 per cent, if there is no string, the pieces get mashed. That is why I have used them as full Beans.

  3. Poppy Seeds: Poppy Seeds, known as Khus Khus, are not available in some countries. Roasted Bengal Gram can be a good substitute. But the savoury taste that Poppy Seeds bring is pretty unique.

  4. After you add Poppy Seeds Masala, you must keep stirring the vegetables or the Masala sticks to the pan.

  5. Options: You could use the same recipe for Broad Beans and Gherkins(tindora) too.

Easy Cluster Beans Fry | Gawar Ki Sabzi Recipe| Cluster beans recipe (Goruchikkudu recipe)

Ingredients

  • 400 gms Cluster Beans
  • 1 tsp Salt
  • Water – To cook
  • For Poppy Seed Masala
  • 7-8 Red Mirchi
  • 1 tbsp Poppy Seeds (Khus Khus)
  • Dry Coconut
  • Salt
  • For Fry
  • 1/4 cup Oil
  • 3/4 cup Chopped Onions
  • 3 Green Chillies
  • Salt
  • 2 Pinches Turmeric
  • 1 tsp Ginger Garlic Paste
  • 2 Pinches Garam Masala
  • Green Coriander – A little

Instructions

  1. Add water to Cluster Beans and cook till 80%. Remove the water and let cool.
  2. Once they are cool, remove the string from the length of the Cluster Beans and cut them into pieces slightly longer than an inch.
  3. Add ingredients for Poppy Seeds Masala and make a fine powder.
  4. Heat oil in a pan, add chopped Onions and Green Chillies, and cook until the onions are soft.
  5. Add Garlic Ginger paste and fry.
  6. Add Salt and Turmeric to the Cluster Beans pieces and fry until the beans' moisture is reduced.
  7. After 3-4 minutes, add Poppy Seeds (Khus Khus) Masala and Green Coriander, mix well until the pieces are coated. Cover and cook for 15 minutes on medium flame while stirring now and then.
  8. Add two pinches of Garam Masala and remove it from the fire.
  9. This Curry tastes good with both Rice and Rotis.
