Tips

Aval (Chudwa/ Pressed Rice):

• In Kerala generally red Aval or Red Pressed Rice is used. I could not procure those, and so I have used the thick white Chudwa.

• Remember to roast the Chudwa on a small flame slowly to prevent getting the stuff burnt.

Banana:

• You may use any variety of Banana. The desi variety, or the vangadam variety or any other will be suitable for this drink. Any sweet ripe Banana will taste quite well.

• Mash the Banana with a Potato or Dal masher so that half may get pulpy and half is in small pieces. That will be ideal for the Aval Milkshake.

Milk:

• Boiled and refrigerated cold milk only should be used for the Aval Milk. In Kerala they like to use even Curdled Milk.

Groundnuts:

• Roast groundnuts on a small flame so that they get roasted evenly without getting black burnt spots.

Method of Serving:

• Serve the Aval Milk as soon as the Chudwa has been added. The ideal thing is to have some of Aval still crisp in the milk. If you let the Chudwa be soaked in the milk too long, it will be soggy and does not taste good.
