Paneer Matar Masala Pulao in cooker - This Paneer Spicy Rice is a great one for not just parties and weekends. It has the great aroma of Ghee and spices and has a combined taste of sour, strong and spicy. The Onions we add give a tang to the Rice.
Pulaos are of various kinds. They can be made with various kinds of ingredients. That is how I have created this Rice. It is quite a simple recipe.
Usually, Rice is made as Paneer Rice or Peas Rice or combining both. This recipe mixes both too but the method and the ingredients vary a little.
This Paneer Spicy Peas Rice tastes great with cool Raitha.

Tips
Paneer:
Fry Paneer pieces until they turn light golden. If they are fried too much, they do not absorb the spices for the Rice.
Peas:
I have used frozen Green peas so added them at the very end. If you are using fresh Peas, add them immediately after the Onions are fried.
Basmati:

I used Basmati Rice, soaked for an hour. This Rice takes 1.5 cups of Water per cup if cooked in a pressure cooker. It becomes too soft if you use 2 cups of water.

If you are using Sona Masuri Rice, then add 2 cups of water to one cup of soaked Rice. Cook to two whistles on high flame, a third whistle on low flame and then let it rest for 20 minutes.
Ghee-Oil:
I have used Ghee to get a balanced taste to the Rice but you could use Oil or both.
Marinated Onions and Green Chillies:
The Onions and Green Chillies, soaked in Vinegar/Lemon Juice, when added to the Pulao, add a dash of tangy taste to the Rice. But, if you don’t like Onions, you can skip them.

Ingredients

To marinate Onions Green Chillies
- Juice of one Lemon
- 2 Green Chillies slit
- 1 Pieces of Onion.
- Salt
- 1/4 tsp Sugar

For Rice
- 1/2 cup Ghee
- 1 Biryani Leaf
- 4 Cardamoms
- 4 Cloves
- 1 Cinnamon
- 1 tsp Black Cumin
- Nutmeg – A little
- 1/2 tsp Pepper
- 200 gm Paneer
- 2 Onions strands
- 1 tsp Ginger Garlic Paste
- 1/4 tsp Turmeric
- 1/2 tsp Roasted Cumin Powder
- Salt
- 1/2 cup Tomato Pieces
- 1/2 cup Frozen Peas
- 2 cup Basmati Rice soaked for an hour (1 కప్ 185 gm)
- 3 cups Water
- 2 Green Chillies Pieces
- Green Coriander Chopped - A little
Instructions

Add all the ingredients for marinating Onions and let it rest for an hour.

Melt Ghee and add the dry spices.

Add Paneer pieces and fry until light golden.

In the remaining Ghee, add Onion strands and roast until light golden.

Add Ginger Garlic paste, fry and add Turmeric, Salt, Cumin Powder and add some water.

In the fried Spices, add Tomato Pieces and Peas and cook for 3 minutes. Then add the soaked Rice and fry until the moisture goes away.

Then add hot Water to the and add Green Chillies, Green Coriander, Paneer pieces and cover and cook to two whistles on a high flame. Then switch off and let it rest for 20 minutes.

After 20 minutes, strain the marinated Onions and Green Chillies pieces and spread on Rice. Serve with cool Raitha.
