Preparing any kind of Pulao is very easy. All you need to do is mix all vegetables and it becomes Vegetable Pulao but if you mix Mint Leaves it becomes Pudina Pulao. The ingredients used in Mint Rice are almost the same as used for Vegetable Pulao, but preparation and taste varies. You can serve it with cold and delicious Raita.

Pulao can be made in various methods but I’m teaching you the quickest method of doing it. You can make Pulao with leftover Rice as well. You can make it like the way you make ordinary Pulao. I will be teaching you my simple way of making it and also directly cooking in a pressure cooker.

Tips

1.If you want the Rice to be individually separated: I used Basmati Rice. You can use Sona Masuri as well. To make Rice non-sticky and the grains fluffy and separate, soak the Rice for some time. Add little Oil, Salt and cook it on a high flame till it is 90% cooked. Now drain out the excess water and spread it on a plate coated with Oil. Let it cool completely. Now we have non-sticky and Rice with fluffy grains.

2.To cook in a pressure cooker:Fry Onion and Masala paste and add the Rice which was soaked for an hour. Fry them together for 2 minutes and add 1:1 water and cover the cooker using the lid. Cook on a high flame till the first whistle. In case you are using Sona Masuri rice, add 1:1 ½ water and cook till you hear 2 whistles. Do not open the lid forcefully after switching off the flame and let the Rice cook on steam for some time. It will be ready to serve.

3.Chilly:Green Chillies are more advisable to use than Red Chillies in this Pudina Rice.

4.Pudina paste:Add small ice pieces and cold water to Mint leaves while grinding to retain its fresh and green color. Otherwise it may turn black.

Ingredients

  • 2 tsp Oil
  • 1 tsp Ghee
  • 1 Bay leaf
  • 1 Inch Cinnamon
  • 5 Cloves
  • 4 Cardamom
  • 1 Onion (Large: Chopped/ Grated)
  • 5 Green chillies (Slit)
  • 1 tsp Garam masala
  • 1 tsp Ginger garlic paste
  • 3 tsp Pudina paste
  • 1 Bundle Fresh Mint Leaves
  • 1 tsp Lemon juice (Optional)
  • 110 gms Rice (Finely cooked)
  • Salt

Instructions

  1. Fry all spices in Oil and Ghee.
  2. Add chopped Onions, Green Chilies and cook on a low flame till the onions turn golden brown.
  3. Add Salt, Garam Masala, Ginger Garlic paste to the fried onions and cook for a minute.
  4. Add Mint leaf paste and fry till the oil gets separated from the paste. Add Mint leaves and fry for 1 minute.
  5. Now add cooked Rice and mix well with the Pudina paste. Remove from the fire. You can add Lemon juice if you like. Lastly, add 10 fresh Pudina leaves and fried Onions for decorating the Rice. Pudina Rice can be served with delicious and chilled Raita.
