Tips

.If you want the Rice to be individually separated: I used Basmati Rice. You can use Sona Masuri as well. To make Rice non-sticky and the grains fluffy and separate, soak the Rice for some time. Add little Oil, Salt and cook it on a high flame till it is 90% cooked. Now drain out the excess water and spread it on a plate coated with Oil. Let it cool completely. Now we have non-sticky and Rice with fluffy grains.

.To cook in a pressure cooker:Fry Onion and Masala paste and add the Rice which was soaked for an hour. Fry them together for 2 minutes and add 1:1 water and cover the cooker using the lid. Cook on a high flame till the first whistle. In case you are using Sona Masuri rice, add 1:1 ½ water and cook till you hear 2 whistles. Do not open the lid forcefully after switching off the flame and let the Rice cook on steam for some time. It will be ready to serve.

.Chilly:Green Chillies are more advisable to use than Red Chillies in this Pudina Rice.

.Pudina paste:Add small ice pieces and cold water to Mint leaves while grinding to retain its fresh and green color. Otherwise it may turn black.
