Carrot Rice is healthy and is done very quickly. Carrot Rice made in my style does not have the Ginger Garlic spice. There is some spice but nothing overwhelming. They tickle your palate when you eat and keep your stomach easy after you finish.
This Carrot Rice is aromatic and it is a perfect recipe if you are having guests over for lunch.
Tips

It is important that the Rice is fluffy. If you add some Salt to the Rice while cooking, then the Salt gets properly absorbed. Adding later does not make the Salt stick to the Rice.

The little bit of Sambar Powder we add gives a nice aroma and taste to the Rice.

Ingredients
- 1 cup Rice (Fluffy and cooked along with Salt)
- 1 cup Grated Carrots
- 2 tbsp Raw Coconut Grated
- 1/2 cup Onions Sliced
- 2 Green Chillies
- 2 Sprigs Curry Leaves
- 2 tbsps Green Coriander
- 1 tbsp Lemon Juice
- 1 tsp Sambar Powder
- Salt
- 3 tbsps Oil
- 15 Cashew Nuts
- 1 inch Cinnamon
- 4 Cardamoms
- 4 Cloves
- 1 Biryani leaf
Instructions
- Heat Oil and add Cardamoms, Cloves, Cashew Nuts, and Biryani leaf and roast until they give out a nice fragrance.
- Add sliced Onions, Green Chillies and Curry leaves and fry until Onions lose their raw taste.

Add grated carrot and fry for three minutes until the raw smell is gone.
- Add Salt and Sambar Powder. Add the Raw Coconut and mix well. Add the cooked rice and mix well.
- Squeeze ½ a Lemon and sprinkle Green Coriander before you take the Rice off the fire.
