Upma is made at least twice a week in every south Indian home. Sometimes, in South Indian weddings, it is made as a tiffin. Or it is cooked when there are a lot of relatives visiting.

Upma can be made with Bombay Rava, Rice Rava, Millet Rava and Wheat Rava too. The other Upmas need some spicy accompaniment. But this Wheat Semolina Upma needs just a spoonful of Sugar, and you can enjoy it.

My style of Wheat Semolina Upma is different from others and easy to make.

Tips

Wheat Semolina:

  1. They often sell Maize Rava in the name of Wheat Semolina in the market so ask for Bansi Rava or Red Wheat Rava (it happens in Telugu states). If you like, you can use Corn Semolina too.

  2. Upma feels a little bit mushy on heat. But gets set when it cools down.

Boiling Water:

Wheat Semolina Upma usually has 1:1 Water. But my Wheat Semolina Upma needs 1:3 Water. When there is so much Water, Upma will still be soft after it cools down. Upma does get cooked even on 1:2 Water but becomes hard and coarse after it cools down.

Jaggery:

Add a small piece of Jaggery to balance out the sourness. But drop it if you don’t like it.

Peas:

I have used frozen peas, so I added them after the Onions are cooked. If you are using fresh Peas, fry them along with the Onions.

Ingredients

  • 1 cup Wheat Semolina
  • Tamarind – Size of a Lemon
  • 3 cups Water
  • Salt
  • 2 tbsp Oil
  • 1 tsp Ghee/Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Black Gram
  • 1 tsp Bengal Gram
  • 3 Red Chillies
  • 1 tsp Cumin Seeds
  • 1/2 cup Chopped Onions
  • 2 Green Chillies Chopped
  • Asafoetida – A pinch
  • 2 Sprigs Curry leaves
  • 1/4 cup Peas
  • Jaggery – Small ball
  • Green Coriander – A little

Instructions

  1. Melt Oil/Ghee and roast Wheat Semolina on a low flame until it turns white.
  2. Heat Oil and add Mustard Seeds, Black Gram, Bengal Gram, Cumin Seeds, Red Chillies, Asafoetida, Green Chillies one by one and fry well.
  3. After the seasoning is done, add Onions and let them cook to soft. Then add Peas and cover, and cook for 2 minutes.
  4. Add 3 Cups of Water to the Lemon Sized Tamarind and extract the juice. Add the juice, Salt, and some Jaggery to the Onions and let it simmer on a high flame.
  5. In the simmering juice, add the roasted Semolina, cover and cook for 15 -18 minutes on a medium flame. Keep mixing in between.
  6. Sprinkle Green Coriander and remove it from the fire.
