Garlic Spinach Mushroom curry has a special flavour of Spinach and Garlic and will be liked by all. It looks like Palak Paneer, but tastes quite different. It goes well with Roti or Naan.

We all like the famous Palak Paneer, even this is equally tasty and will be liked by all.

I had this curry for the first time in a Punjabi Dhaba on the highway. They served it along with Dal Tadka. The Garlic from the Dal Tadka got mixed with the Spinach curry and tasted excellent. So I got an idea to make Curry using Garlic, Cottage cheese and Mushroom to get a different taste.

Tips

Spinach:

1.To retain the lovely green color of Spinach, put the chopped Spinach in boiling water till you get a single boil and put it in cold water immediately, so that it doesn't turn black. Add a little sugar while boiling it.

Mushrooms:

2.Cut the Mushrooms into two halves. Boil them for 2 minutes, and put them in cold water to make them remain hard.

Garlic:

  1. This recipe needs more Garlic for fragrance. Fry them till they turn light golden brown, or else they lose their freshness.

Salt, Chilli, Spices:

  1. Add a little less Salt, as Spinach naturally has some Salt. Add if required after checking the taste.

Other Tips:

5.Cook Spinach on a low flame, till the oil floats to the top, otherwise the raw taste remains.

  1. I used fresh cream. You can add beaten curds along with Mushrooms if not available.

Ingredients

  • 250 gms Spinach leaves
  • 3 Green Chilli
  • Salt
  • 1 tsp Sugar
  • 2 liters Water
  • For the Curry
  • 200 gms Mushrooms
  • 2 tbsp Oil
  • 2 Red Chilli
  • 1 tsp Cumin
  • 2 tbsp Chopped Garlic (10 small ones)
  • 1/4 cup Chopped Onions
  • Salt
  • 1/4 tsp Turmeric
  • 1/2 tsp Garam Masala
  • 1/2 tsp Chilli powder
  • 1/2 tsp Roasted Cumin powder
  • 1 tsp Kasuri Methi
  • 2 tbsp Fresh cream
  • 125 ml Water
  • For Seasoning
  • 1 tbsp Ghee
  • 2 Red Chilli
  • 1 tbsp Garlic

Instructions

  1. Boil chopped Spinach, Green Chillies, Salt, Sugar and boil them once and put them in cold water immediately.
  2. Boil Mushrooms in a separate pan and put them in cold water and keep them aside.
  3. Heat some oil in a pan, fry Red chillies and Cumin wait till they splutter.
  4. Now add grated Garlic and fry till they turn light brown then add chopped Onions and fry till they turn golden brown.
  5. Once it is properly fried add Salt, Turmeric and Spinach paste. Cook till the oil floats to the top.
  6. Add Chilli powder, Garam masala, Kasuri Methi and fry for some more time, till the oil leaves the Spinach.
  7. Add water to it and once. Add Mushrooms to it and fry till the oil floats to the top.
  8. Finally, add Fresh Cream, stir well and remove from flame.
  9. Melt some ghee in a pan, add Red Chillies, and Grated Garlic. Roast them till they turn golden brown and add them to the Curry.
  10. This Curry tastes well with Roti and Naan.
