Green Gram Jaggery Rice Balls | Pesara Bellam Kudumulu | Sweet Kudumulu - Ganesh Chaturthi brings a plethora of holy offerings! One tastier and healthier than the other.

Kudumulu or Rice Balls that are wrapped in a leaf and cooked on steam are much healthier than the regular ones made with Coconut and Jaggery.

In villages, the Kudumulu are wrapped in leaves of the Turmeric plant and cooked on steam. Since my childhood, I have seen them being cooked, wrapped in Badam LEAVES, traditionally used as plates. The aroma that the leaf adds when steamed is really great.

In south India usually, the holy offerings for Ganesh Chaturthi are made with Rice flour. These Rice Balls are called Kudumulu or Kolukatai in Tamil. They are all the same except for the stuffing.

Tips

Stuffing :

  1. Green Gram should be roasted until they give out an aroma. And then cook till they are soft on a medium flame. The gram gets cooked really soft only on a medium flame.

  2. If the grated Jaggery is mixed while hot, it melts. I left the Jaggery until it melted completely and then let it cook slowly. This kind of slow cooking makes the stuffing very tasty.

  3. I have added only Cardamom powder for fragrance in the stuffing. If you like, you could add Cinnamon and Nutmeg too.

Rice Flour:

  1. The Rice Flour should be cooked on a medium flame until it becomes a paste.

  2. You could use Brown Rice Flour too, if you like.

Leaf Plate:

  1. If you have Badam leaf plates, use them. Or you could use Banana leaf too. But the steaming in the Badam leaf plate gives a nice aroma. You could use Turmeric leaves and Betel Leaves too. .

  2. If the leaf plate is dipped in water for a minute, then the leaf won't get torn even if folded.

Ingredients

  • For stuffing
  • 1 cup Raw Green Gram
  • 3 1/4 cup Water
  • 1 cup Grated Raw Coconut
  • 1 cup Jaggery grated
  • 1 tsp Cardamom Powder
  • 1 tsp Ghee
  • For the Rice Ball
  • 1 cup Rice Flour
  • Salt – a pinch
  • Water – Sufficient for Dosa like batter

Instructions

  1. Green Gram should be roasted until they give out an aroma. And then cook till they are soft on a medium flame until you get five whistles.
  2. Add the rest of the ingredients to the cooked Gram and cook until Jaggery melts fully.
  3. Cool the mixture.
  4. Add Salt Water to the Rice flour and make a loose batter.
  5. Then cook it until it becomes a thick paste and then let it cool.
  6. Dip the leaf plates in water for a minute and remove.
  7. Coat the leaf with some Ghee and make Lemon-Sized Rice Flour balls and spread them thin. Then put a Gooseberry-sized ball of the stuffing and tap the edges gently.
  8. Then fold the rest of the leaf and put them in an Idly cooker. And cook on a high flame for 5 minutes and steam on a low flame for 4 minutes and remove.
  9. Serve with Ghee.
