Tomato Sesame Chutney | Tomato Nuvvula Chutney Recipe- This Chutney has a combination of flavours, sour, spicy and a balance in between, and it can be a nice accompaniment for Rice, Idli, Dosa, Chapathi, Vada and Puri.

Tips

Desi Indian Tomatoes are the best :

• Desi Tomatoes are better to get the yummy sour taste to the Chutney.

• People who prefer more sourness can add some Tamarind but the intrinsic sourness that comes from ripe Tomatoes has a better taste.

• Ripe Desi Tomatoes are the best. In case you do not get Desi Tomatoes, use Hybrid Tomatoes. But then you have to add some Tamarind.

A few tips for Tomato Sesame Chutney:

• The Chutney tastes different if you let Tomatoes cook into a soft mass. And something else if you just let the raw taste go and then take them off the fire. I personally like the latter, especially when the Chutney is meant to accompany Tiffins.

• It is better to use more Chillies than usual for this Chutney. Because, using Sesame Seed Powder makes it a little bland and less spicy.

• Coriander seeds can be ground into a powder along with the Sesame Seeds or the other way to do it is to set aside the Coriander seeds, make the Chutney with the rest of the ingredients and then finally, after seasoning, add crushed Coriander Seeds. They stand out in the Chutney here and there and make for an interesting taste on the tongue.

• Garlic can be dropped if you don’t like that taste.

• Remember, this Chutney smells a little stale by evening in hot season. It lasts two days if you refrigerate it.

What can be used instead of Sesame Seeds?

• Groundnuts, roasted Flaxseeds, roasted Bengal Gram, Roasted raw Bengal Gram can also be used.

Ingredients

  • 1/2 kg Ripe Tomatoes
  • 8 -10 Green Chillies
  • 2 tbsp Sesame Seeds
  • 5 Garlic Cloves
  • 1/4 tbsp Fenugreek Seeds
  • 1 tbsp Coriander Seeds
  • 1 tsp Cumin Seeds
  • 3 tbsps Oil
  • Salt
  • For Seasoning
  • Curry Leaves (One Sprig)
  • 1/2 tsp Mustard Seeds
  • 2 tsps
  • 1/4 tsp Oil

Instructions

  1. Dry roast the fenugreek seeds in a pan. Then add Coriander Seeds, Cumin Seeds and finally Sesame Seeds and roast until they crackle. Cool them down and grind them into a powder.
  2. Heat oil in the pan, add Green Chillies and fry till soft. Then add Tomato pieces and let them cook.
  3. Tomatoes should cook fully and become a soft paste. Then add Sesame Seed powder and Garlic and Salt and make it a soft paste.
  4. Heat oil for seasoning, add Mustard seeds, Cumin seeds, Curry leaves.
  5. This Chutney lasts three days in the winter season if stored in the refrigerator.
