Besan Halwa | How to Make Besan Halwa with Tips

This Halwa made with Besan, Ghee, and Sugar is a favourite dessert in my family. It is very simple to make. There is no need to wait for any special occasion or festival to make this Halwa. It is like a festival day on any day that this Halwa is made.

This soft and mild Halwa recipe follows some very easy measures for its ingredients. We sue a fixed ratio of the flour, Ghee and Sugar. So you can easily make any quantity of Halwa using this ratio.

Tips

Besan:

• Roast the Besan in ghee over a low flame. Keep mixing while it is roasting. When the Besan gets to a light golden colour, add the sugar. Besan can get burned within seconds. So it is important to keep mixing and never leave it unattended.

Ghee:

• Take the Ghee in equal measure to Besan, whatever the quantities. I have however taken ¾ cups of Ghee to 1 cup of Besan. You may take even half measure of Ghee to one measure of Besan.

• Ghee should not be added all at one time. If you add Ghee greadually, a little at a time, Besan gets roasted well and evenly. The Halwa also turns out to be light and fluffy.

Sugar:

• Sugar should be half of the measure of Besan. The Halwa will be perfect in its sweetness. If however, you relish greater sweetness, you may increase the quantity of sugar.

Food colour:

• I mixed a pinch of Orange food colour in a spoonful of water, and added it to the Halwa just for enhancing the look of the Dessert. It may be avoided if you are not keen. You may add a little Saffron for flavour.

Dry Fruits:

• I have added Almond slivers. You may add cashew nuts, melon seeds or any other dry fruit of your choice.

Lastly:

• This Besan Halwa stays fresh for 3-4 days. But the Besan absorbs the ghee very quickly. So, when the Halwa gets cold, it solidifies and looks lumpy. Heat the Halwa for 30 Seconds in the Microwave. The Ghee will melt and float at the top. The Halwa gets soft and tasty.

Ingredients

  • 1 Cup Besan
  • 3/4-1 Cup Ghee
  • 1/2 Cup Sugar
  • 2 tbsp Bombay Rava (Sooji/ Semolina)
  • 1 Cup Hot Water
  • 1 tbsp Food Colour (Orange)
  • 1/4 tbsp Cardamom Powder
  • 1/2 Cup Almond Slivers

Instructions

  1. In a quarter cup of ghee, roast the Besan on a low flame, carefully. Keep mixing while you roast the Besan, till a good aroma wafts, like that of roasted cashew.
  2. Add Rava to the Besan along with 2 tbsps more of Ghee and keep mixing till well-roasted.
  3. To this aromatic mixture of Besan and Rava and Ghee, add the sugar and mix. Pour in the hot water and keep cooking till the water gets absorbed. Don’t forget to keep mixing all the time.
  4. Once the water is reduced and the Halwa consistency is reached, add the rest of the Ghee, food colour, Cardamom Powder, and Almond slivers. Mix and let it cook until Ghee floats on top. Take it down from the flame.
