Desi Style Crispy Chicken Fried Rice | Chicken Fried Rice | Chicken Egg Fried Rice

This Desi Style Chicken Fried Rice is different from the usual Restaurant Style Chicken Fried Rice, and infinitely tastier! Try this recipe for your party menu or on any special Day! It is sure to be an instant super hit!!

The best feature of this dish is the combination of crispy fried chicken bite size pieces and the spicy strong native fragrances. I have created this recipe by combining features of street food recipes with indo-Chinese cooking style and a few tips from Thai cooking methods. This Fried Rice is a family favorite. On most weekends we enjoy the Chicken Fried Rice in place of the usual Biryani.

This simple chicken Fried Rice is made almost in the same way as the usual Chicken Fried Rice dish. But the ingredients are a little distinctive. It is a dish with a twist with complex sweet, spicy, strong tastes with crisp fried peanuts adding to your eating pleasure.

Tips

Chicken:

• Use tender boneless chicken. Older chicken will taste rubbery in this recipe.

• The chicken should be coated with all the masalas and allowed to stand in the spices for a good amount of time. In this way the chicken is sure to absorb the flavors of the spices well.

Marination:

• I have used Corn Flour so that it may bind the spices well with the chicken. You may also use egg white. The coating will hold well and the taste will be enhanced.

• The coating batter should be thick and firm. Only then will it be holding on to the chicken pieces.

Method of Frying the chicken:

• The chicken pieces should be fried slowly over a medium flame until the pieces change color. Then raise the flame to high and the chicken will come out crisp.

• If the chicken pieces are fried on high flame throughout, the pieces will be brown outside but remain uncooked inside.

Rice:

• Boil Basmati Rice with salt so that the grain is cooked up to 90%. Strain it and spread the rice out on a flat wide plate. Sprinkle a little oil over it so that the rice grains remain separate. The rice should not be cooked to a soft consistency.

• You may use ordinary rice that you cook for your daily meal.

Ingredients

  • For marinating the chicken:
  • 250 gms Boneless chicken
  • 1 tbsp Garam Masala
  • 1/2 tbsp Coriander (Dhaniya) Powder
  • 1/2 tbsp Roasted Cumin (Zeera) Powder
  • Salt (to taste)
  • 1 tbsp Red Chilli Powder
  • 2 tbsp Corn Flour
  • For Fried Rice:
  • 1/3 Cup Oil
  • 2 Eggs
  • 1 tbsp Ginger (finely grated)
  • 1 tbsp Garlic (finely grated)
  • 1 Sprig Curry Leaves
  • 2 tbsp Sweet Corn
  • 1/4 Cup Capsicum
  • 1/4 Cup Carrot (thinly sliced)
  • 1/2 Cup Cabbage (finely chopped)
  • 1/4 Cup Beans (finely chopped)
  • Salt (to taste)
  • 1 tbsp Pepper Powder
  • 1 tbsp Red Chilli Sauce
  • 1 tbsp Sweet Chilli Sauce
  • 1 tbsp Dark Soya Sauce
  • 1 tbsp Arrowroot Powder
  • 1/2 tbsp White Pepper Powder
  • 1/4 Cup Peanut (Fried)
  • 1/4 Cup Spring Onions (Chopped)
  • 1.5(185) Cup (gms) Rice cooked dry and firm (with salt)

Instructions

  1. Marinate the Chicken with all the spices and Corn Flour for at least 30 minutes.
  2. Heat the oil well in a pan. Fry the marinated chicken pieces on medium flame till red in color. Keep the Chicken pieces aside.
  3. Beat the eggs well. Pour the eggs in the pan and make a fluffy omelette. Break the omelette into big pieces. Add the finely chopped Ginger and Garlic and toss well.
  4. Add the chopped Beans, Carrot, Corn, and Cabbage and toss for just one minute. Then add Pepper powder and toss again.
  5. After the mixture is well tossed, put in the cooked rice along with all the other ingredients and toss on high flame for 2-3 minutes.
  6. At the very end, add the fried chicken pieces and chopped spring onions. Toss well and serve hot.
