Pepper Chicken Fry tops the menu list for any weekend parties. Though there are many types of Chicken Fry recipes this is the most liked and popular item. We can have this along with Sambar or any Lentil soup.

Pepper Chicken smells aromatic if made with freshly ground Masalas, I have given below the recipe for Pepper Chicken Masala powder in South Indian style, for ready reference. Generally, in Pepper Chicken recipes, the spiciness of Red Chilli Powder is less and the intensity of Black Pepper is more. In this style, I made it semi dry so that you can have it by mixing with Rice. This tastes better with Puris than with Rotis.

Though it is very easy to make at home, unless we follow some Tips we do not get the Restaurant taste.

Tips

Chicken:

  1. Chicken should be of medium size and if the pieces are too small, they tend to become even smaller after they are fried.

  2. Before frying, rinse the Chicken pieces and soak them in Salt Water so that they absorb Salt and taste good.

  3. Fry in the Oil on a high flame to get rid of the water that is in the Chicken.

MASALA:

  1. Roast all the ingredients evenly on low flame to get an aromatic powder.

FEW MORE TIPS:

  1. We have to be a little generous with the Oil to get the right taste.

  2. To get that Restaurant Taste, use an Iron pan and not a non-stick pan.

Ingredients

  • 1/2 Kg Chicken (medium size pieces)
  • 75 ml Oil
  • 1/2 tsp Mustard Seeds
  • 2 Curry leaves
  • 10 Garlic pods
  • 1 tsp Ginger Garlic Paste
  • 1/2 cup Chopped Onions
  • 6 Red chillies
  • 1 tsp Ghee
  • Coriander leaves – a small bunch
  • Salt
  • 1 tsp Red Chilli Powder
  • 1/4 tsp Turmeric
  • 1 tsp Lemon Juice
  • FOR MASALA
  • 1 Cinnamon
  • Stone Flower – very little
  • 1 tsp Cumin Seeds
  • 1 tsp Fennel Seeds
  • 2 tsp Black Pepper
  • 3 Cloves
  • 3 Cardamom
  • 1 Star Anise
  • 1 Kapok Buds
  • 1 tbsp Coriander Seeds

Instructions

  1. Roast all the ingredients required for the Pepper Chicken Masala on a low flame until they turn aromatic and grind them into a fine powder.
  2. Heat the Oil and add Mustard Seeds, Red Chillies, Curry Leaves, Garlic and fry till they turn golden brown.
  3. Add Chopped Onions, after they become soft, add Ginger Garlic paste and fry it for a while.
  4. Add the Chicken pieces (soaked in Saltwater), close the pan with a lid, and on a high flame, fry until the Chicken leaves all the water.
  5. Now add Salt, Red Chilli Powder, Turmeric Powder, Lemon Juice, Pepper Chicken Masala to the Fried Chicken, mix it thoroughly and allow it to fry for another 15 mins till the oil floats on top.
  6. Make sure that, every 5 mins. you scrape and mix the masala properly.
  7. Once Oil floats on top of the Chicken, Switch off the stove, add chopped Fresh Coriander leaves and serve the hot ‘Pepper Chicken Fry’.
