The name Kesari reminds us of Rava Kesari, the usual recipe. But this Vermicelli Kesari can be made more easily and quickly than Rava Kesari. I like the Vermicelli Kesari better, so I am sharing my recipe. You could make it for a holy offering or for your own sweet tooth.

There is a Muslim version to Vermicelli Kesari too. They make it differently at the time of Ramzan and during Weddings. I will share that recipe some other time.

Tips

Vermicelli:

I have used the readymade Vermicelli . It is better to take fresh Vermicelli and roast it in Ghee rather than use pre-roasted Vermicelli available in the market.

Sugar:

I have used ¾ cup sugar for a Cup of Vermicelli. This is exactly right but if you like it sweeter add more Sugar.

Edible Camphor:

I have not used the edible Camphor, but if you can add a pinch at the very end, if you like the flavor.

Saffron:

The pinch of Saffron that you add to Kesari gives great taste and colour naturally. Instead of Saffron, you could add a little red food colour.

Ingredients

  • 1 cup Vermicelli
  • 2 cup Water
  • 3/4 cup Sugar
  • 1/4 cup Cashew Nuts
  • 2 tbsp Raisins
  • 2 tbsp Ghee
  • 1 tsp Cardamom Powder
  • Saffron – A pinch

Instructions

  1. Melt Ghee and roast Cashew Nuts and Raisins until they turn golden.
  2. Add Vermicelli to the remaining Ghee and roast till golden.
  3. Pour water into a pan, add saffron and let it boil on high flame.
  4. Add Vermicelli to the boiling water and cook on medium flame until some water remains.
  5. Add Sugar and Cardamom Powder and cook until it becomes thick. Add Cashew Nuts and Raisins and remove them from the fire.
