Sesame Rice | Ellu sadam | Temple Style Nuvvula Annam - Taste for taste and full of nutrition. Try this Tamil Nadu special recipe of Yellu (Sesame Seeds) Sadam (Rice). This Rice is given as a holy Prasadam in Shiva and Shani temples.

Though Sesame Seeds Rice is made all over India, in Tamil Nadu black Sesame Seeds are used for this Rice. They are healthier than the regular Sesame seeds. Usually, it is believed that black Sesame seeds are used only in rituals but they are actually full of nutrients. They have high amounts of Vitamin D.

The recipe I am giving here is not for the Prasadam but for lunch boxes. And if you follow the tips, you will know how to make it for Prasadam as well.

Tips

Black Sesame Seeds:

Black Sesame Seeds are more aromatic than the white seeds and have a tinge of bitterness. Those who do not like black Sesame Seeds and those who don’t like them can use white Sesame Seeds.

Oil:

In temples, this recipe is made with Sesame Oil. You could use some other Oil. Or use Ghee for seasoning. If it is made with Ghee, use more Chillies.

Some other methods:

  1. You could use Pepper instead of Chillies. And add Green Chilles to the seasoning.

  2. I am making this for lunch boxes so I have added Green Chillies soaked and dried in Buttermilk. If you want to make it a holy offering, use Green Chillies. And you could add Peanuts and Cashew Nuts for additional taste.

  3. There is also another method in which a small piece of raw Coconut can be ground along with the roasted Sesame seeds. That is another taste.

  4. If you make the powder and store it, then the Rice can be made with Sesame seeds roasted afresh.

Ingredients

  • For Sesame Spice Powder
  • 3 tbsp Black Sesame Seeds
  • 2 tbsp Black Gram
  • 6 - 8 Red Chillies
  • 1 Sprig Curry Leaves
  • 2 Pinches Asafoetida
  • Salt
  • 1 cup Rice (185 gms Salted and cooked in a fluffy way)
  • For Seasoning
  • 3 tbsp Sesame Oil/Ghee
  • 1 tsp Mustard Seeds
  • 3 Chillies soaked and dried in Buttermilk
  • 2 Sprigs Curry Leaves
  • 1 tbsp Raw Bengal Gram
  • 1 tbsp Black Gram
  • 1 tsp Cumin Seeds

Instructions

  1. Roast all the ingredients for Sesame Spicy Powder and set them aside.
  2. Add Sesame Seeds and Curry Leaves and roast until the Seeds splutter.
  3. Make a fine powder with the roasted ingredients.
  4. Add the Spicy powder to the fluffy Rice. Check the taste after mixing and then add another spoon of powder, if needed.
  5. Heat Oil and add Chillies soaked and dried in Buttermilk, Mustard Seeds, Bengal Gram, Black Gram, Curry Leaves and Cumin Seeds and fry until they crackle.
  6. Add the seasoning to the Rice with the powder and mix well.
