Katte Pongal is the evergreen favourite of every South Indian. It was given out as Prasadam in Vaishnava temples in the earlier days. Later on, it turned into the perfect breakfast item.

Though Telugus make it a little less, it is extremely popular in Tamil Nadu. What I am making is the Andhra Style Pongal. There is a slight difference between the Andhra and Tamil Nadu versions. Tamils do not use Green Chillies and do not make it very thin inconsistency. In the Andhra recipe, Dosa Rice is used and it is eaten in a spicier version. And it does not become dry even hours after it is made and stays soft.

Tips

Rice:

  1. It is better to use Dosa Rice, Ration Rice rather than regular Sona Masuri Rice so that the Pongal tastes good even after it is excellent.

Green Gram:

  1. Add a Cup of Green Gram to a Cup of Rice. If you roast the Green Gram on a low flame until it gives out an aroma, then the Pongal tastes even better.

Cooker:

  1. Pongal tastes better if you cook it separately instead of in a pressure cooker. If you want it to be done quickly, though, you can cook it in the pressure cooker.

Ghee:

  1. Add as much Ghee as you can. It makes the Pongal very tasty.

Ingredients

  • 1 cup Dosa Rice/Ration Rice
  • 1 cup Moong Dal
  • 5 cups Water
  • For seasoning
  • 1/3 cup Cashew Nuts
  • 1 tbsp Cumin Seeds
  • 1/2 cup Ghee
  • 1 tbsp Pepper
  • 2 Sprigs Curry Leaves
  • 2 pinches Asafoetida
  • 1 tbsp Grated Ginger

Instructions

  1. Wash Rice well and soak for 30 minutes.
  2. Add Green Gram to a pan and roast on a low flame until it gives out an aroma. Then wash it.
  3. If you are cooking separately, then take a thick-bottomed vessel, add 5 cups of water. Add Salt, washed Rice, washed Green Gram, and cook on a medium flame for 30 minutes, stirring occasionally.
  4. Once the Rice is cooked well, switch off the stove and set it aside.
  5. If you cook Pongal in the Cooker, add all the ingredients, and cook up to 5 whistles and then add seasoning.
  6. Melt Ghee and add seasoning ingredients, fry well and mix in the Pongal.
