Manglore Style Spongy Set Dosa at home | Set Dosa | Steam Dosa | How to make Set Dosa - Delicate to touch, delicious to taste, Set Dosas are those that melt like butter in your mouth. It is called a set because you are served three dosas at one go.

They originated in Mangalore but are more popular in Tamil Nadu. I had earlier posted the recipe for Tamil Nadu style Set Dosa. This is now the Mangalore style dosa.

There is a slight variation in the measurements for each of those recipes, and it is this tiny variation that makes a big difference in the taste of the Set Dosa. In Tamil Nadu, they serve Vada Curry, Sambar, Tomato Chutney and Coconut Chutney. I personally feel just the Vada Curry alone is more than sufficient.

Tips

Rice:

• Dosa come out soft when made with PDS ration rice rather than with Sona Masoori rice.

Batter Grinding:

•If you are grinding the batter in a mixie, do it slowly by mixing it in parts. If you are using a stone grinder, you need to spend more time to get a smooth batter. Fermentation:

• The batter needs to be fermented for 12 hours without fail. If you live in a place where temperatures are low, keep it in a warm place to let it ferment properly. It may take even 16 hours at times.

• After 12 hours, mix a little water in cooking soda and mix the batter vigorously till the count of 10 with a big laddle. The batter has to be so thin inconsistency that it should fully slide down the laddle. It has to be a little thinner than what we usually use for regular Dosas.

Perfect Dosa:

• The unique character of a Set Dosa is to be spongy with a million bubbles. That is why we add cooking soda.

• We add a wee bit of turmeric to Mangalore Set dosa. But it is optional in case you do not like the yellow touch.

• The batter should be deposited at one spot on the pan. It should not be spread thin across the pan.

• Set Dosa should be roasted red on the bottom side. And get steam cooked on the top side. It should not be turned on to the other side after the first side is done.

Ingredients

  • 1 1/2 cup Ration/Dosa rice
  • 1 tsp Fenugreek Seeds
  • 1/2 cup Black Gram
  • 1/2 cup Thick rice flakes
  • Salt to taste
  • 1 tsp Cooking Soda
  • 1/2 tsp turmeric
  • water

Instructions

  1. Wash rice, black gram, fenugreek seeds, and rice flakes thoroughly and soak for five hours.
  2. After 5 hours, grind the mixture into sift batter, adding part by part.
  3. The batter then should be allowed to ferment for 12 hours.
  4. After 12 hours, add salt to taste, cooking soda mixed in water, and the batter thinned to easy-flow consistency.
  5. On a heated pan, pour the batter at one spot and leave it there. Add oil to the edges, cover it to let the steam stay in and steam cook on medium flame.
  6. Remove the dosa after the bottom side is roasted red.
