You can understand the sheer popularity of Idly if you look at the fact that every South Indian home has invariably Idlis made as tiffin. But then the Idlies vary with the State too. But, let me tell you, this Sabudana Idly is not made anywhere, in any state. It was born in the Vismai Foods kitchen.

The recipe is very simple, there is no fermenting or grinding involved and it tastes great when accompanied by any Chutney powder.

Tips

1.Saabu : Small Sabudana soak more quickly. And the Idly gets cooked more quickly. If you are using the thick pearls, pulse it is for five seconds in a mixie and then soak.

2.Whatever the measure of your recipe, all the other ingredients are the same as the quantity of Sabudana.

3.This Idly needs to be steamed a little while longer than normal Idly. Switch off the stove and let it rest for at least 5 minutes and then take it out.

4.These Idlies do not become dry like the Rava Idly. They will be soft and a little sticky.

Ingredients

  • 1 cup Thin Sabudana
  • 1 cup Hot Water to soak the pearls
  • 1 cup Whisked Curd
  • 1 cup Idly Rava
  • 1 cup Water
  • Salt – to taste
  • 1/2 cup Green Coriander

Instructions

  1. Wash the Sabudana well, add hot water and soak it for 15 minutes.
  2. In 15 minutes, the Sabudana gets soaked well. Then add the rest of the ingredients and leave it for another 5.
  3. In an Idly plate, apply some Ghee/Oil and fill the batter to 3⁄4th parts and keep it in the Idly Cooker with steam.
  4. Let the Idly be steamed on a high flame for 8 minutes and on a low flame for 5 minutes and let it rest for 5 minutes.
  5. After 5 minutes, dip a spoon in Water and remove the Idlis with it. This Idly tastes great with any Chutney or Spicy Powder.
