Salty Rice Balls | Healthy Snack Uppuu Undalu Recipe | How to make Salty Rice Balls - Do you want a healthier option of a snack instead of chips? Then Salty Rice Balls are the perfect snack. I am usually asked to suggest healthy snacks for children but it is difficult to make exclusive recipes for children and adults. So I don’t usually specify that this is for kids and this is for adults. I just say it is suitable for everyone and children and adults alike eat it with relish.

These Salty Rice Balls are made all over South India but each region has its own variation. Telugus make Uppindi. Tamils make Kolukatai. The Telugu recipe is pretty close to Salty Rice Balls but it looks and tastes completely different.

Older generations and Andhras living close to the Tamil Nadu border are still making these Salty Rice Balls. Telugus make it with sour, thin Buttermilk. But I am making it with water the way older generation Tamils did.

There are a few tips to make this healthy recipe in a perfect way whenever you make it.

Tips

Rice:

If possible, use parboiled Rice. I have used Dosa Rice to ensure that Salty Rice Balls should be soft. You could use Brown Rice too if you like.

Seasoning:

If you add a little more Black Gram, Bengal Gram to the seasoning and fry them till crunchy, then the Salty Rice Balls taste great.

Options:

I have used to Water to grind the Rice to a smooth paste. You could use sour, thin Buttermilk instead of Water, if you like.

Ingredients

  • 1.5 cup Rice
  • Water/Sour Buttermilk – adequate
  • For Seasoning
  • 3 tbsps Oil
  • 1 tsp Mustard Seeds
  • 2 tbps Raw Bengal Gram
  • 2 tbsps Black Gram
  • 2 Sprigs Curry Leaves
  • 1/2 tsp Cumin Seeds
  • 2 Red Chilli chopped
  • 2 Pinches Asafoetida
  • 2 tbsp Green Chillies chopped
  • 1/3 cup Raw Coconut flakes
  • Salt – To taste

Instructions

  1. Wash and soak rice for 5 hours. Strain the water and grind to a smooth paste.
  2. Heat oil in a pan and add the ingredients for seasoning one by one and fry till golden. Add the Green Chillies finally and fry for another 30 seconds.
  3. In the roasted seasoning, add the ground Rice batter and Salt and cook for 3-4 minutes on a medium flame until it comes together and removes from the fire.
  4. In the cooked mixture, add the coconut flakes. Apply Oil to your hands and take the still-hot mixture and press well with the wrist of the hand. Make Lemon-sized balls of the flattened rice mixture.
  5. Steam the Balls for 15 minutes and switch off.
  6. Hot or cold, these Salty Rice Balls taste just great.
