Tips

  1. Sesame Seeds, Groundnuts, Raw Coconut, add thickness to the Gravy for Telangana Style Egg Stew and give a balanced taste. Sesame Seeds, Groundnuts and Coconut, should be roasted on a low fire. Then the Gravy tastes good.

  2. I have Coconut Powder so I used it. But you can use dried Coconut pieces too.

  3. Onions should be fried well to make the Gravy tasty.

  4. Sesame Seeds and Groundnuts should be ground to a smooth paste. Then you get more Gravy.

  5. Gravy thickens as it cools down. So make it a little dilute while cooking so that the thickness is right after the Gravy cools down too.

  6. If the Gravy is too thick, add boiling water and bring it to the right consistency.

  7. If you fry Boiled Eggs on a high flame, they won't splutter while stirring. Or the Eggs will split, and oil will get thrown up.

  8. If Tamarind is minimum, then the Stew gets one kind of taste. And a different one if you add more. But if you like, you can add more salt and Mirchi Powder.

Ingredients

  • For the Stew
  • 5 Boiled Eggs
  • 1/3 cup Oil (80 ml)
  • 1/2 liter Water
  • 2 tbsps Chopped Green Coriander
  • For Gravy
  • 1/4 cup Groundnuts
  • 1/4 cup Sesame Seeds
  • 1/4 cup Dried Coconut Powder
  • 2 tbsp Coriander Seeds
  • 1 tsp Cumin Seeds
  • 1/4 tsp Fenugreek Seeds
  • 2 Big Onions chopped (150 gms)
  • 1 tbsp Ginger Garlic paste
  • 1/4 tsp Turmeric
  • 1 tbsp Mirchi Powder
  • Salt
  • 200 ml Tamarind Juice (extracted from 60 grams of Tamarind)
  • 1/2 liter Water

Instructions

  1. Add Groundnuts and Fenugreek Seeds to a pan and roast well on a low flame.
  2. Once the Groundnuts are thoroughly roasted, add Coriander Seeds and Cumin Seeds and roast for a minute. Add Sesame Seeds and let them splutter a little. Finally, add Coconut Powder, roast for 30 seconds and make a soft Powder of this mix.
  3. In the same pan, heat oil, add chopped Onions and fry well. (Gravy tastes good only if the Onions are well fried.) Add the Onions to the Powder.
  4. In the same Mixie Jar, add the Powder, Ginger Garlic Paste, Mirchi, Salt, Tamarind Juice, Turmeric and make a smooth paste.
  5. Now, make cuts in the Boiled Eggs, add to the oil used to fry Onions, and fry with an open ladle on a high flame. Remove.
  6. Once the eggs are fried, add the smooth paste and fry until oil separates.
  7. Add 1/litre Water, cover and let it cook well on a high flame.
  8. Once the Gravy is cooked, add the Eggs, reduce the flame, cover and let cook for 15 minutes. Keep mixing it from the bottom now and then.
  9. Garnish with Green Coriander before removing it from fire.
